Anyone got a good Jamaica ginger cake recipe??

I am really really not a natural baker and my cakes NEVER rise properly. But I am committed to making a Jamaica ginger cake for DP's birthday and I'm panicking as it's for his family too!!

I have found some recipes online but having never made one before, does anyone have any tried and tested good recipes or have any good tips? Are they hard or easy to make?

I have a nearly-1lb loaf tin, is that big enough? There will be 8 having a slice.

Try this one. Just make sure that it's a rounded teaspoon of bicarbonate and not a heaped teaspoon, otherwise it'll rise too fast and then sink horribly.

60g butter
125g golden syrup
100g plain flour
25g self raising flour
1 teaspoon bicarbonate of soda
2 - 3 heaped teaspoon ground ginger
1 teaspoon mixed spice
100g caster sugar
Pinch of salt
125ml milk
1 egg, beaten

Grease and line a 20cm square cake tin or a 2lb loaf tin. Pre-heat oven to 170c/gas mark 3.

Put butter and golden syrup in a small saucepan and melt over a low heat, stirring occasionally, then remove from heat.

Sift both flours, the soda and the spices into a mixing bowl. Add the sugar and salt , give it a good stir, then add the egg and milk mixing until smooth. Gradually add the melted butter/syrup mix, stirring until well combined.

Pour the batter into the prepared tin and bake for 50 - 55 mins (fan oven I would say 40 - 45 mins) until risen and firm to the touch. Allow to cool in the tin for 5 mins before turning out onto a wire rack to cool.

Oh, and try and leave in an air tight tin for a day so the top gets deliciously sticky!

I use that recipe but just pour in the golden syrup from the tin as it’s a faff to measure it. 3 heaped teaspoons of ginger is better than 2.

Id like to difference between rounded and heaped too .

Is it similar to my peanut butter teaspoons? They may be naturally rounded, but they come out (well) heaped

The 'official' interpretation of a rounded tsp used to be 'as much above the spoon as below the spoon' whereas a heaped spoon is whatever you can manage to pile on it! It all falls apart when you see today's vast array of differing size teaspoons... a plastic medicine spoon is probably the most accurate.
