Converting a recipe to gluten free. Help needed!

CanoeDoYouThinkYouAre · 10/04/2019 13:46

I'm making a birthday cake for DH and would like to make it gluten free so DD1 can have some but I'm not sure if the best way to do it!

I've seen gluten free self raising flour in the supermarket, can I just swap the flour in the recipe for this?

It's a specific kind of cake that DH wants which is why I'd prefer to convert my current recipe.

Any advice?

When I need to do a gluten free cake, I just use rice flour instead. Add a teaspoon of baking powder for every 250g rice flour if you are replacing self raising flour.
It seems to work ok

NicoAndTheNiners · 10/04/2019 14:04

I've done this effort with brownie recipes and it's worked ok.

I've found gluten free self raising flour to be very good. If you do decide to use a different flour with baking powder, please make sure you use GF baking powder.

Try Doves farm self raising flour. Also Betty Crockers GF devil's food cake is a quick bake and tastes amazing. Perfect every time.

CMOTDibbler · 10/04/2019 14:20

Doves Farm GF SR flour will substitute in, though you may just need a teeny bit more liquid depending on the recipe

DameFanny · 10/04/2019 14:23

Doves flours are great - the main difference is the cake doesn't last as long. But that's hardly ever an issue...

What's the recipe?

stucknoue · 10/04/2019 14:25

Use the gf flour, add a tsp extra baking powder and double check any other ingredients, I've found gluten in the strangest of things!

CanoeDoYouThinkYouAre · 10/04/2019 14:30

Thanks for the advice, it was the Doves Farm flour I was looking at!

It's a chocolate and peanut butter layer cake - page 30 on April's Good Food magazine if anyone else fancies trying it.

Don't know that one, but it doesn't sound like something where the slight texture difference will be at all obvious :-)

CanoeDoYouThinkYouAre · 10/04/2019 14:38

Dame enough ganache will cover any mistakes!

Not really helpful to you but could you share a picture of the recipe please?

MrsNai · 10/04/2019 14:46

Swap the self-raising flour for a gluten-free self-raising flour such as Asda's own brand. Also, add an extra egg and a teaspoon of Xanthum Gum to help get a good rise and a light texture.

PlatypusPie · 10/04/2019 14:52

DD is GF - Dove Farms has always been reliable , but as a PP said, you might need more liquid.

DH loves cake making and decided to experiment with a wide variety of flours, especially as he was trying to do low carb but after some very solid results, said he now appreciates the balance of the ready to go flours.

I just swap for doves farm and add an extra egg. Works every time.

DameFanny · 10/04/2019 15:22

Ooh!

CanoeDoYouThinkYouAre · 10/04/2019 15:26

I'll skip the pretzels obviously. The cake is supposed to serve 14. There will be six of us, I'm sure we'll see it off!

I usually just substitute Dove’s flour and add a bit more liquid and a pinch of baking powder.

mbosnz · 10/04/2019 15:31

I use the M&S GF flours - they are so lovely to work with, and give fantastic results.

hardheadedwoman · 10/04/2019 15:34

Ps you could add a pinch of xanthan gum to help it rise reliably - in all Free From aisles in the supermarket. Otherwise ilthere is a risk it will rise initially then sink when it cools down

LadyMonicaBaddingham · 10/04/2019 15:34

Schar do gluten free pretzels, Tesco have them...

CMOTDibbler · 10/04/2019 15:45

Don't add Xanthan if using the Doves Farm SR as it already contains it, and too much makes chewy cake

Troels · 10/04/2019 16:54

I use the self raising GF flour from Asda, add a bit extra baking soda and a teaspoon of xanthan gum. Makes good cup cakes.

squidge2010 · 10/04/2019 16:59

Like pp said gf pretzels! Pretty sure I've had the schars ones from Asda too and they taste just like normal pretzels
