Oops I forgot the Christmas cake!

Sorting in the back of my cupboard today I found the Christmas cake I made last October, and fed with brandy until Christmas when I didn't get round to eating it and its lay forgotten since. It's not iced or marzipaned, but is well covered in greaseproof paper and foil.

I've checked it and it looks good and smells gorgeous, so will it be ok if I wrap it well and stick it in the freezer?

If so, how do I treat it next Christmas, get it out early and feed it some more?

Any advice, and sorry to launch the 'C' word when it's barely April 😘

I don't know that I'd freeze it at this point. It may be better off being stored in an air tight container somewhere naturally cold and dry (like the old fashioned pantry!)

Yes feed rewrap and put in a tin. It will be yummy by next Christmas,. Keep feeding once in a while and feel smug at how organised you are for this year.

I've done this. Just wrap up well and stuff back at the back of the cupboard til next Christmas, it will be fine.

Yup, Easter cake of some sort.
I once left a Christmas on the shelf until the next Christmas- it was fine. Grin

No need to freeze it, it will last till next Christmas. I always make two, one to ice and one to eat as it is. One October I went to get the tins out and discovered last year's uniced cake still there - annoyingly with one slice missing, or I'd have just iced that one. It was delicious though. I fact the second cake is always better than the first, and every year I think, Must make them in the summer and not wait till October...but I'm never that organised.

Grin Have to say Fraser has a point. I can't eat Christmas cake now (can't have wheat or alcohol) but if I could, I don't think I'd be leaving it there.

I think a beautiful cake for Easter is the perfect compromise. It's only 2 weeks away. Plenty of time to make cute bunnies or chicks for the top.

Cover the top with marzipan, decorate with 11 marzipan balls.....Simnel cake.

Just keep feeding it with brandy.
My Nanna used to keep the Christmas cake for a year. The one she made in September was for the following year iyswim, and they were always lovely.
