How to reduce meat/fish intake?

I generally eat fairly low carb but find that 2 out of 3 meals I have each and every day usually contains either meat or fish - now it seems like a lot of meat/fish to consume on a daily basis and quite expensive too.

I usually do pair it with several vegetables though but find it very difficult to eat veg only without meat/fish.

I did consider a few options:
a) meat substitutes e.g. Quorn (but these are made with soy protein which I'm not very tolerant too.
b) eggs - also intolerant to
c) I find that I can easily have cheese instead of meat/fish so veg and cheese but cheese causes me acne, bloating etc.

All vegetables only become delicious once paired with either meat or fish (I do feel gross about it though..) I just don't get how someone can eat just a salad or even a veg stew/soup by itself

Havd you tried doing veg curries, chillies, fajitas etc with lots of spice?

I’m vegan. For tea I had samosas, onion bhajis and lentil daal. Not really low carb but absolutely delicious. What sorts of things do you enjoy?

You could add beans or chickpea to a salad. So roasted pumpkin with roasted chickpeas adds some crunch and texture. Same with pumpkin seeds add texture....

I'm not a vegetarian but cooking more vegetarian meals as one of my daughters has become a vegan. She's not keen on spicy food, which limits things a bit. I don't particularly like substitutes like quorn or soya.

One of my favourite meals is risotto with mushrooms and squash. I put Parmesan on mine and she has a vegan alternative. I also roast lots of peppers and aubergines and use that for a variety of things such as as the basis of a pasta sauce or lasagne, often with squash and/or mushrooms too. Sometimes with lentils or beans in, but often not.

I also roast up lots of root veg and then mash it up and firm it into burger type shapes and fry. A bit like bubble and squeak, but without the cabbage.

I want to be become a bit more adventurous, but don't really have time to experiment much at the moment as in the week I never get home until 7.15 and it can be an hour later. Looking forward to experimenting more when I retire, which is not far away!

I have started doing veg curry, curried veg pie, veg stew/soup/salad.
Veggie lean in 15 book has some fab meal ideas.
My DH was obsessed with meat in most meals but not we don't eat much.
