I have just done a practice run....to test my new pan and the fact am a greedy bitch my scales have broken so found a ratio on google for them...it came from good old mumsnet.

4 tablespoons of flour
1 egg
half a pint of milk

I fryed them in butter it made 3 good size pancakes then i put lime juice because i had no lemon and sugar on the lime was 100% better than lemon.

Tomorrow we have planned
lime and sugar for us grown ups
Kids wont eat mine so ive got them scotch pancakes to have with ice cream and fresh fruit.

What are your plans for tomorrow?

Pancakes for breakfast for anyone who wants them, just lemon and sugar in the morning.
After dinner, any topping goes.
I’ve bought squirty cream, marshmallow fluff, strawberries, raspberries, bananas, chocolate to melt down for sauce, jam, erm, can’t think what else now.
I treble delias pancake recipe, there will be 4 eating pancakes for breakfast and potentially 8 for pudding!

I put a generous amount of butter and oil in the pan, get it properly warm, swirl the melted fats around to grease the pan, then tip them into a bowl before pouring a ladle full of pancake batter in the pan and tipping it around to spread.

After each pancake is cooked the still melted fat goes back in the pan to grease it and the excess is tipped out.

I made orange and lemon curd yesterday and plan to have that on my pancakes tomorrow for dinner.

DD wants pancakes for breakfast and dinner tomorrow (with golden syrup) though she only likes American style thick pancakes and I prefer thin crepes.

Looks like I need all the eggs and flour I've got in!

I check that the pan is hot enough by dropping a drip of batter in. If it doesn't sizzle straight away the pan isn't hot enough yet.

I can't make pancakes, certainly not consistently enough to run the production line needed to satisfy my family.
So I buy mine, some plain and some sweet. I make mildly spicy mince filling for the savoury ones, the sweet ones are a bit of a free for all.
