Meal planning

Anyone care to share their meal plans. I have recently started working and need to be organised. We have 4 DC and many extra curriculars which mean meals have to be prepared in advance (slow cooker/instant pot) or a very quick cook. I have done a plan for this week but it is very lacking in inspiration and there is too much meat. I have a veg Dodger/fussy eater which makes things tricky.

Saturday: Chicken and ham lasagne
Sunday: Beef and veg casserole
Monday: cauliflower and paneer curry
Tuesday: spaghetti bolognaise
Wednesday: lentil, chickpea and chilli soup
Thursday: tomato and bacon pasta
Friday: Fish and chip shop

Butter chicken
Veggie chilli
Nachos (meat or veg)
Stir fries (so quick and so many options)
Tray bakes (my favourite is chicken drumsticks, chorizo, red peppers and onions, baby potatoes - add oregano, zest and juice of an orange, drizzle of olive oil and shove in oven)
Sausage and mash

This week I had leftover roast potatoes from Sunday so on Monday I put fish fillets, cut up rosaries and sugar snap peas in a baking tray, melted some butter with garlic and poured over. 15 minutes in the oven - yum.

Fresh stuffed pasta or gnocci and sauce (very quick)
Baked potatoes, cheese and beans with salad (I think you can do potatoes in slow cooker?)
Homemade soup which I see you already have but more ideas for future... (carrot and lentil/ butternut squash/ nannas magic soup from Tesco advert/roast tomato and basil)
Spanish chicken in slow cooker
Tagine with meat or chickpeas in the slow cooker

I don't think that's lacking in inspiration, sounds reasonably varied considering there are so many of you and with the limitations you have!

A couple of easy variations on what you've got would be a different type of soup and a sort of keema masala curry. As in, mince curry with a tomato based sauce and no peas. Use lentils in place of some of the mince if you're looking to cut down on meat. Would also agree with a pp that jacket spuds and choose your own topping seems an obvious one. Do beans, put out cheese, tuna etc, everyone helps themselves.

Also if you have one particularly fussy eater, I'd be tempted to make up a pot of whatever they like and let them eat that for maybe 2 or 3 nights while you take the opportunity to do something the rest of you eat but they don't.

This coming week and a bit we're having:

Cod traybake
Pork & bean casserole (made with leftover pulled pork from last night)
Ratatouille and sausages
Sausage mash & peas
There will probably be enough sausages left over for the DC to have hot dogs one night
Gnocchi with tomato and bacon sauce
Lentil dhal
Savoury pancakes
Bean chilli

Some great ideas thank you.
Chicken traybake is a good one and will definitely try jackets in the instant pot.
Is a cod traybake the same kind of thing as a chicken or are there magic ingredients?
