Help me get 2 more meals out of my chicken...

I see all the time reference to other people getting 3/4 meals out of one whole chicken and I want to be one of those people. I roasted a chicken for dinner last night. We used the legs and the breasts. Still a fair bit of meat left on the carcass, and I've saved the juices.... what next?!

There's just two of us, but I usually aim to get at least three meals out of a small one:

  1. Hot roast (Me breast, him leg and thigh)
  2. Cold roast (same as above)
  3. Pasta or risotto, with whatever meat is left on the bird and maybe some bacon if necessary

Neither of us are big meat eaters so, for example, I wouldn't have the whole breast for with 1 or 2. I can usually get enough to put in a salad or two for lunch as well.

Carcass and juices go into a bag in the freezer then, when I have a few I boil them up for stock.

I had two chickens at the weekend, but they are Belgian, so 1.3 kg each. Three adults had a roast dinner on Sunday. Monday, cold with Indian spiced potatoes. Tuesday, ds (23) had a generous sandwich, dh had a chicken toastie, and the cats have been having bits of it since Sunday.

If there is enough, I'll make a pasta bake with added extras like leeks, lardons and mushrooms tonight.

I haven’t found stock messy or time consuming or ‘stinky’. It’s a very easy was of getting a lot of flavour. I usually throw away the veg I’ve used for stock as I think they’ve done their bit. I freeze ends of celery to put in the stock pot. and find that adding a tomat9 and a brown onion With it’s skin turns it a nice brown.
