Vegetarian. Often toast or fruit for breakfast. Pasta or salad for lunch. Dinner can be anything from fajitas to stir fry to veggie sausage and mash.

Recently I've had tofu, aubergine and red pepper in black bean sauce with rice noodles, the m+s plant kitchen pizza and salad, spaghetti 'bolognese' with mushrooms and lentils, veg soup, chickpea and veg curry, bean chilli and rice with cashew sour cream.
I don't normally eat meat substitutes (apart from the odd Linda McCartney sausage) but I tried some of the Oumph kebab 'meat' the other day in a fajita and it was really delicious.

Pescetarian (sp?) but even then I'll go weeks or months without eating fish.

Cauliflower cheese and beans, tarted up macaroni cheese, omlettes, scrambled egg, baked potatoes. Soup (whizzed up pasta sauce with mozzarella in it for protein), cheese and crackers with bits like mini gherkins, pickled onions, chutney etc

It's a pretty simple diet and I need more green veg in there but I've lost weight and kept it off without really trying.

I don't eat meat substitutes or tofu as I think the texture is awful.

I have museli with almond milk most mornings.

I do love curries/stir fries. Most roll pastries are vegan. Buddha bowls are great.

I love Thug Kitchen and Deliciously Ella's cook books.

Every Friday we make pizza, and I have Asdas free from potato based mozzarella on mine.

I served this with homemade naans and rice yesterday. Delicious.

I no longer buy quorn products because they were making me gassy and lots of people have posted that it makes them ill.

I do buy the cauldron sausages and marinated tofu pieces. The sausages are very different to meat ones, but really good cooked in the oven. They need to be well cooked (or they’re claggy) but not over cooked or they basically become sausage shells 🤣

The marinated tofu pieces are great on their own or in a stir fry.

I don’t buy Linda McCartney stuff because it’s so meat like I can’t eat it.

I make a lot of things like chili, lasagne, Shepard’s pie etc but I don’t substitute the meat I just make completely vegetarian versions. I make lasagne loads of different ways.

Wraps

Soup

Fajitas

Burritos

Pasta bake

Baked potatoes

Nachos

Wedges with toppings

Chili

Veggie burgers

Pizza

Cheesy Veg (like macaroni cheese but with veg instead of pasta)

Waitrose stock Taifun basil infused tofu (chilled dept near the olives etc) it’s a fairly solid piece of basil infused compressed tofu, Yep. Sounds vile but it’s actually very very nice. Inestnitnin dandeuches, on crackers, on its own, in things...I guess in places you might have ham?

I don’t eat eggs though, there’s a lot more variety if you eat eggs.

Incrediblysad, eggs are the one thing that stops me going vegan. I have switched to oat milk and yoghurt substitutes, not keen on cheese at all and could give that up or use vegan ones but I love eggs.

Me and DH eat lots for breakfast, lunch and evening meals. We are lucky that a neighbour has chickens that have the run of her garden and we buy our eggs from her. That makes me feel a bit better about eating them

I'm an extremely lazy vegan. I can practically live on the Wicked Kitchen range from Tesco, along with Alpro yoghurt and Deliciously Ella energy ball things (together with some 100% cocoa Montezuma chocolate), and lots of fruit and salad and extra fresh veg and bread and such.

Last night I had pasta with added lentils and cauliflower and Soli fresh pasta sauce. (Just a combination of things I happen to have in). It was surprisingly lovely.

I tend not to use meat substitutes. I did at first when I missed meat, but I don't now. That said, I agree that pulled oumph is bloody lovely!

I eat chunky salads with mixed grains and Halloumi, lots of curries, pastas, roast squash with stilton and chopped nuts baked in (delicious), roast veg with orzo or grains or rice, cauliflower and broccoli cheese and roast potatoes (with gravy).
I use plant based milks and yoghurt s, but love cheese and eggs too much to be vegan!

This thread is making me hungry!

Vegan, but I don't know what oumph is... don't do meat substitutes though.

Breakfast, porridge, oat milk and berries or wholemeal bread toasted with peanut butter

Lunch, bagel and roasted veg
Apple/few nuts

Dinner, chilli/ratatouille/jacket and salad, home cooked meals are packed with beans and pulses.
Alpro Soya choc pud
B12 supplement

I’m not but we did a vegan week in January and now eat vegan once a week.

Dishes I have made so far (just Googled easy vegan meals):

Red pepper and aubergine lasagne (white sauce made with vegan margarine and soy milk)
Potato chickpea and spinach curry
Tomato tart with mustard potatoes
Beetroot and red onion tarte tatin
Potato and onion pie
Stir fry with homemade hoisin sauce
