My friends coeliac and I want to make her a cake. Inspire me please!

I've found a couple that say gluten free flour. Is this the right thing for people who are coeliacs? Im going to her house with friends on Monday and I'd like to take a cake that we can all have but that I've made myself.
Any advice/recipes much appreciated!

If it helps I've found Doves Farm flour is the best for cakes.

Just use a normal recipe but replace the flour with 3/4 gluten-free flour (Dove's Farm is good) and a quarter ground almonds.
Or make a swiss-roll/chocolate roulade type cake that has no flour in it anyway.
Or brownies made with ground almonds and no flour (Nigella has a great recipe)

I would check with your friend first that, as lovely as it is of you to want to do this, she is ok with you baking for her. Many coeliacs use separate utensils and baking tins for gf baking to avoid the possibility of cross contamination.

Otherwise I'd recommend cakes like apple, banana or carrot cake or brownies, as gf flour can be quite 'dry'. I use any old recipe and sub gf flour, but add a bit of milk if it's not the right consistency when mixed.

How thoughtful!

The Doves Farm / almond substitution is a good idea.

Something to consider is that you will want to be sure to meticulously clean everything and check there's not crumbs in your butter etc to avoid cross contamination.

Your friend has probably had a million flourless chocolate cakes and orange polenta cakes, so I may avoid these if you're a star baker and want to do something super extra special - though these are delicious and will surely be appreciated as well.

Dove farm self raising is great for cakes - I use the recipes on the back of the bags. I sometimes replace a little flour with cocoa powder for a chocolate cake and they come out even better.

Most celiacs would be happier if you didn't due to the cross contamination risk. You would need new baking tins, at least.

If she likes chocolate this cake is amazing. Very very easy to make too. It can be plain chocolate or you can sub 1/3 of the choc with orange chocolate for an orange chocolate cake.

I would still suggest getting new baking tins.
Most recipes work fairly well just by subbing gluten free flour I've found, especially in very moist cakes. I've never found xantham gum did much.

This chocolate cake recipe is epic. I’ve made it with both rice flour as it says, and just bog standard Doves Farm gluten free flour and it’s fantastic either way. I’m the only coeliac, but now make it for all family birthdays on request as everybody loves it.

Also on the xantham gum - it is useful, but some premixed gf flours already contain it, and if you add extra it can all go a bit brick-like. So use with caution!

Nigella Lawson Easter Nest Cake is flourless. I make it with smarties at other times of the year. Should be fine as long as you check whatever you use as a topping.

Just make sure that your friend is not allergic to nuts, because so many of the gluten free flours are made with nuts. I mention this because my DD has been recently diagnosed and is struggling because of the excessive use of nuts in gluten free products. She has a potentially fatal nut allergy.
