Diabetic friendly dinner party ideas?

Type 1 very strict diabetic coming for dinner this weekend, would appreciate any ideas you can throw my way so that it can still be special and not send any guests into carb deficit or coma.

The big one for me is keeping the carbs relatively separate. A spoonful of potatoes, a spoon full of peas and a spoonful of rice are all easy to estimate, a pea and potato curry with rice isn't quite so easy. Pureed vegetable soup is a personal nemesis, I'm fine with my known recipes but fridge leftovers soup gets somewhat more tricky.
