The easier to prepare, the better Smile

I have 3dc, 1 of them a vegetarian. I am so bored of my lack of dinner inspiration. Would love to hear some new ideas for what to serve up day after day Grin

Anything that could be turned into a fresh meal the next day would lovely too.

Today we had chicken breasts, topped with halloumi cheese served with pesto on top. Had them with asparagus, mix of baked white and sweet potatoes and carrot sticks. Went down really well with everyone! (Me, dh and 4 year old and 6 year old). Was so simple - baked the chicken breasts topped with slice of halloumi half way through then chucked the pesto on.

Fajitas - cook the chicken separately to the veg and everyone can dig in to whatever they like!

Macaroni Cheese with broccoli, put a mix of breadcrumbs and grated mozzarella on top. Sprinkle crisp bacon onto the non vege plates.

Mushroom stroganoff- can easily be poured over a chicken breast.

Stuffed peppers - quorn bolognese and rice topped with mozzarella.

Stuffed Jackets - mix the soft cooked potatoe with cheese and mushrooms before putting back into the skins and baking until crisp. Serve with a nice crisp green salad.

Pasta salad - cooked and cooked pasta with sweetcorn, peppers, cucumber, etc and dressing - chicken or prawns can be added afterwards.

Lasagne, easily adaptable with Quorn mince.
Buy pizza bases and let everyone make their own.
Chicken or veg skewers with satay sauce and rice
Sausages (veggie ones to) mash and red onion gravy
Chorizo and lemon linguine just leave the chorizo out for the veggie. I make it with cream, Parmesan a lemon and olive oil dressing
Roast dinners I used to be veggie and replaced the meat for me with something from Linda McCartney range

Wraps are a big hit in our house at the moment – we just warm up the wraps in a pan, DSS12 fills lots of bowls with fillings and we all build our own at the table. Last night the filling options on offer were:

Chicken breast (from the night before) torn into strips
Beef strips
Guacamole
Chopped onions
Chopped red peppers
Salad leaves
Sriracha
Spiced chickpeas
Falafel balls (leftovers from lunch)
Grated cheese
Diced mango (also leftovers from lunch)

Great for when you've got lots of 'bits' in the fridge that wouldn't make a 'whole' anything Grin

Egg fried rice is so quick and easy.
I make toad in the hole a lot as it’s popular with my Dc and I use packet batter mix. Quorum sausages work well in it.
Pitta pizzas are cheap and easy to adapt to everyone’s likes and dislikes.
Feta and couscous salad with red peppers. www.bbcgoodfood.com/recipes/11690/10minute-couscous-salad Left overs are great for lunch.

Toad in the hole - DH is vegetarian so we usually make one with vegetarian sausages and one with meat sausages
Veggie chilli in wraps with guacomole, sour cream, lettuce etc
Lentil shepherds pie - much nicer than it sounds

Thanks so much for all the ideas, will definitely go for the toad in hole option - no idea why I didn't think of that. My batter always ends up soggy, or too dry though - any tips?
@Downstairs, the pasta recipe sounds amazing - do you have a recipe, or just throw it all in?

Chickpea and tomato curry. With garlic, onions, ginger, and spices. You can use tinned tomatoes but there are piles of fresh ones cheap in the supermarkets at the moment (45p for a pack 6 round here).
I've been eating it leads this week, and it's delicious, and very suitable for the cold weather.
