Hi MN. I'm trying to do a bit of bulk preparation and would like to know which vegetables freezes well. I've tried searching online but too many sources are just confusing me. Anyone tried the following and how does it turn out when cooking? Any other useful tips?

-onions

  • sweet potatoes
  • peppers
  • butternut
  • spinach

Anything else that freezes well. Thanks.

Butternut and sweet potatoes freeze really well, butternut keep for ages without being frozen provided you don't damage it and you store it somewhere cool and dark.

Onion freezes well but it also starts to defrost really fast, and then you end up with the bag becoming a solid mass of onion and it’s difficult to scoop out a portion. I’d freeze one chopped onion per bag.

Thanks! I've bought some good reusable bags so I'm glad to start filling them up.
I live in a very warm country so things get spoiled quickly and lots of waste so even more keen to freeze and save.

You could freeze spinach easily, too, but when it defrosts it’s only suitable for cooking (in curry, soup, etc). It just goes all soggy when it defrosts.
