Breakfast ideas?

This sounds pathetic, but I am stuck for ideas on what to have for breakfast. Up until Christmas I would have a pre-made pastry (you know the ones that have six in a pack?) from Sainsbury's but they're full of sugar and bad for the environment so I've stopped. Since then I've been struggling to find things for breakfast. I have about ten minutes in the morning so it's a bit of a rush. Bearing in mind that I'm allergic to nuts and have exhausted every type of toast, porridge and nut-free breakfast bar going, what else is there to try?

Hard boiled eggs? Fruit and yoghurt? Cooked meats? Those rubbery breakfast muffins made with eggs?

Avocado and feta on toast
Mushrooms on toast (could cook the night before)
Bacon sandwich (again, bacon cooked and heated up in microwave)
Toasted cheese and ham sandwich

Ah that's where the timing issue comes in, I don't have time to cook eggs in the morning. Fruit and yoghurt is a good idea though!

I love yoghurt for breakfast - the protein fills you up. Get a bag of frozen fruit of your choice and put some into a bowl in the fridge overnight. By morning it'll be thawed. Add yoghurt. No wastage and no prep in the morning.

I often pre boil eggs and eat them in the morning on rye.
Yogurt/tinned or frozen fruit.

Greek yoghurt, berries/banana/apple (any fruit really) then top with a bit of granola... add nuts and seeds for extra healthiness.

Agatha Cereal isn't my thing because it gets soggy so quickly, and I'm not really a milk person. Fussy sod I know!

I'm really warming to the fruit and yoghurt idea, next time I go shopping I'll have a look for some frozen fruit.

Try making protein pancakes with oats,eggs and bananas the night before, heat in microwave and eat with fruit and yoghurt.
Scrambled eggs with smoked salmon, or avocado and salsa.
Overnight oats with banana and blueberries.
Baked eggs which you can make in batches and keep in the fridge. All different types of fillings. Just heat in microwave or eat cold. I also take them for a quick snack or lunch with salad.

Yes you do have time to do eggs in the microwave!

2 eggs, dot of butter, splash milk, medium power, 1 and a half mins, done!

Ooh what about homemade banana /zucchini bread?

You could toast it too and top with banana, Greek yog etc.

I make omelette mix the night before and just throw it in the pan in the morning which literally takes 5 mins to cook and 5 to eat.

2 eggs, chopped red onion, pepper, jalapeno, turkey and herbs.
Throw in frying pan and sprinkle cheese before serving.

If you’re making them for one, you can do scrambled eggs as quickly as a piece of toast.

I really like sweet corn pancakes. I make a lot and eat them for a few days.

Potato pancakes are great heated up in the toaster.

Can't face cereal in the morning and have minimal time so batch cook breakfasty flapjack things to eat in the car. Mainly oat based with a bit of agave nectar and dried fruit.

If you’re giving up the pastry for environmental reasons it’s pissing into the wind to replace for a meaty breakfast.

Toasted bagel with nut butter
Fruit salad (make the day before)
Nice bloomer toast and jam/marmalade
Overnight oats
Baked oats

I sometimes precook mini oven omelettes at the weekend. Just standard omelette mix, eggs, seasoning, any veg./cheese/ham you like beaten up. Pour into oiled muffin/or fairy cake tins and bake for about 15/20 at 180 degrees (or thereabouts, it’s very haphazard). Cool and freeze. The night before take out 1 or 2 depending on size and leave to defrost overnight. If you want you can warm them for 20 seconds in the microwave before eating.

If you don’t have an oven you could make the same thing in a frying pan, then slice into wedges before freezing. That would take less than 5 minutes to cook even with loads of veg in it and you could reheat in the frying pan the next morning.
