What fresh soups do you like?

Trying to eat a bit less crap, especially at work. (Free fast food, yay!🙄🙄)

I've tried to make my own a few times and they're always pretty bland so I'd like to buy while I figure that out. I've got Morrisons Lentil and bacon right now and it's pretty tasty.

Any suggestions? There are so many I don't know where to start!

Leek and Potato is easy to make!

4 very large potatoes in 1cm cubes (you can leave the skin on)
1 large leek, sliced thinly
1 large or 2 small onions
2pints chicken stock.

Fry onions and leek still going clear/bright green.

Add potatoes and stir in with salt and pepper.

Pour in stock and boil for 20 mins.

Blend with a stick blender if you prefer it smooth (I like this one lumpy but prefer smooth lentil!).

Enjoy!

2-3 potatoes
2-3 carrots
Tin sweetcorn or
Tin butter beans or
Tin lentils
2 chicken stock cubes (or veg)
500 ml water (add more to thin soup)

To make the base:
Boil carrots and potatoes till soft then mash/blend.
Add the stock cubes to 500ml boiling water and mix with the carrots & potato mash.

To add different flavours:
Then add the tinned corn or beans. If you want to add other veg then boil or cook till soft and blend in with the soup base. You can vary the texture by blending till smooth or leaving lumps in.

This also freezes well.

Butternut squash and red pepper.
Peel and chop a squash and a pepper, fast simmer in veg stock (i use one of those knorr stock pots) with a pinch of salt, black pepper and a few chilli flakes. When veg soft, whizz with a stick blender and season to taste.

Onion, garlic, carrot, 500g peeled and chopped beetroot. Sweat for 10 mins. Add stock and potato and simmer for 40 mins. Blend, put in the juice of Half a lemon.

I also make a dead easy one from tins. A tin of chopped tomatoes, drained butter beans, drained carrots. Simmer together with some veg stock, salt and pepper, whizz with stick blender and add more stock to required thickness.

Lentil and bacon:
Fry 2 rashers of finely chopped bacon with one each of very finely diced onion, carrot and celery stick and some garlic. Stir in cumin, coriander, ginger, turmeric and a pinch of chilli. Add a tin of green lentils and a pint or more of veg or chicken stock and bring to the boil. Blend half to thicken and leave half unblended to give texture.

Basically a load of carrots, chopped and roasted, veg stock and about and inch of fresh ginger, grated.

Chicken & sweetcorn noodle soup.

Chicken leftovers from the magical chicken
Frozen Sweetcorn
Chicken stock
Cooked noodles
Five spice
Spring onions (optional)
Hot sauce (optional).

No method really just put it all in a pan, bring to boil and simmer for a few minutes.

I make soup using any or all of butternut squash, sweet potato and carrot, with onion, a bit of creamed coconut and a few curry spices. It's lush and just a little bit of coconut makes it taste really rich..

I got a soup maker it takes 19 minutes!
Cream of tomato soup is my favorite atm, although I just chuck what ever in it and hope for the best ( I'm not a great cook!)
Lob all of it in the soup maker don't even need to chop and then its done!
4 tomatoes (fresh)
garlic
pinch of sugar
passata ( 1/4)
1 chicken stock cube.

I love soup; quick to make , cheap and nutritious,

Beetroot.
Butternut squash and sweet potato.
Red pepper and tomato.

Sweet Potato and Chorizo - sweat off onion, garlic and bit of chopped chorizo sausage, add sweet potato, cover with stock, cook until potato softens and blend.

Thai Curry Butternut - sweat off onion and a spoon of thai red/green curry paste, add chopped (I usually toast in big chunks, peel of the skin and chuck it in) butternut, a ton of coconut milk and a little water. Cook through and blend.

Soup maker you just chuck the stuff in, turn it on and it does it all for you! No chopping, blending etc, lazy way but fab.

If you find home made soup bland, put in more salt. It's still likely to be less than what's in ready made soup.

I've tried a few ready made ones and they all seem a bit weirdly artificial tasting, even ones that look really nice from M&S.

Although I do like canned tomato (Baxters or Waitrose Essential, not Heinz).

I do leek and potato with frozen leeks and onions (both at Asda), no chopping, cheaper and they last ages! All you need to buy fresh are the potatoes.

I cannot stand brocoli. I hate it. Eating it makes me gsg, however in a soup I love it.

Onions, ton of garlic lightly fried in pan.. Chicken stock, brocoli... Boil.

Blend it all, with handful fresh water cress, walnut and goats cheese in bottom of bowl, pour soup in, more walnut and goats cheese on top, lemon juice.
