Last year we stayed at Warwick Castle. Options for this year?

Last year we took the kids to Warwick Castle. The have "lodges" on site. So we were able to stay over. In the evening dinner was a "banquet" with knights sword fighting. Plus access to the castle on both days.

We don't get much time off so this kind of short event works for us.

Does anyone have any recommendations for similar one night event destinations?

I've heard the London Zoo overnight stay is very good. I'm currently debating whether I can justify the cost because I know DD2 would absolutely love it.

My ds(3) asks me several times a week to go to Warwick Castle! We didn't stay there but visited 3 times last year as he loved it so much! Halloween was fab there.

Santa sleepover at Alton towers was fantastic so wonder if they do other seasonal events in the summer. The hotel, food and entertainment were brilliant.

How old are your DC?
I highly recommend the sleepover at Natural History Museum. DC needs to be 7-11. It is expensive but worth it. You need to be prepared for minimal sleep though. Activities are organised until after 11pm and you have to sleep on a stone floor with only a thin mat unless you bring some sort of thicker mat to sleep on. I loved it though (so did DD). If you are interested, go to NHM website and look at Dinosnores.

Science museum do sleepovers too. Or night in treehouse in Port Lympne overlooking the animals

You can stay overnight at ZSL Whipsnade, they have lodges within the zoo itself not far from some of the enclosures. It runs year-round or close enough to it (might be March-October or something along those lines). The compromise is less theming and events, but you can book up for keeper experiences there I believe.

Not sure if it’s only for youth groups, but you can also stay on HMS Belfast on the Thames.

We went Glamping at Leeds Castle (Kent) two years ago which we all really enjoyed. The castle and grounds are beautiful. It's not as 'disneyfied' as Warwick Castle but well worth a visit IMO.

We went to Thomas land for their magical Christmas with a hotel stay and breakfast package. It was a great way to kickstart our Christmas celebrations.
