A cheesecake and a brownie for Christmas eve?

I have family coming on xmas eve and said id make dessert. How long will they keep?

Brownie will be fine made tomorrow. You could make the biscuit base for the cheesecake tomorrow but I would do the cheese topping bit on the day,

Cheesecake should be left to firm overnight so make it the day before. Brownie will be fine made at the same time if wrapped in greaseproof and stored in an airtight tub.

This brownie recipe from Avoca is amazing and they improve with age. A flash in a microwave revitalised them back to their original molten chocolate state. It is recommended they are baked til still a wee bit wobbly in the middle (and I say refrigerate before cutting into portions Then keep refrigerated until needed, then you can microwave them or conventional oven them for a minute or two). I replace the flour with ground almonds and leave out the chopped nuts. It's a good'un!

225g unsalted butter
225g Dark chocolate ( We use Callebaut finest belgian chocolate - from a place in Ratoath!)
4 eggs
225g rich dark brown sugar
110g plain flour
80g nuts (hazelnuts/pecan/walnuts - optional)
icing sugar

Melt butter and chocolate in a bain marie
Whisk eggs and sugar together for about 10 minutes
Stir in the chocolate/butter mix
Fold in the flour and nuts

Pour into a greased, lined tin
Bake at 170C for 30-35 minutes (don't be tempted to leave them longer, they will dry out)
take out of oven and cover with a damp tea towel and leave to cool (mine never get this far before being eaten!)
Cut into squares and dust.
