Xmas dinner leg of lamb recipe

So this year I'm doing gammon in coke for Xmas and leg of lamb in red wine with garlic and thyme. Just wondering if anyone has any good ideas of how to cook the lamb or whatever thankyou x

We have lamb every Christmas and dh cooks it. Mix your ingredients into a paste and rub it into the lamb. Cover with foil and leave in the fridge overnight to marinade. He then puts it on early on a low heat (150 degrees) and just leaves it to do it's thing. If it's a leg it takes about 4 hours. It always turns out nice.

Also I do a Gammon in coke or pineapple juice overnight in the slowcooker. It's now become a Christmas morning tradition that everyone has some on a bread roll with mustard for breakfast.

Ooh yes definitely marinade as suggested. Slosh a bit of balsamic in too. You'll get a fair bit of meat juices so use it to make some gravy. We do lamb but ours is a spicy tandoori version. We use greek yogurt, lime juice, crushed garlic, smoked paprika and chilli powder. Our dinner has an English/Pakistani fusion. Also doing a turkey joint and now going to defrost a Gammon I have and do it overnight in coke in the slowcooker. So thanks for the inspiration op. I bet your dinner is lovely. Lamb in wine is amazing my husband is a chef he made that last xmas eve was so nice.he cooked it slow just in a pan.

I use variations on this recipe (sorry, can't work out how to do a short clicky link on my phone) a lot and it always turns out beautifully. In fact we've just had it for a celebration meal this evening without figs and with red wine sloshed in.

It's super easy and you can just throw everything in and leave it for 2-3 hours and you'll get lush perfection at the end. Also tastes good (if not better) when made the day before which can be helpful when you've got lots going on.

Aww thanks for all the comments. Some very tasty sounding recipes on here. Only cooked lamb once which was last Xmas and it was nice but I want mouth watering food this year. Deffo looking into some of these recipes xx
