Healthy meal ideas please.

I've had enough of roast chicken, spag bol Wink and with my ds either eating only rice or chips with every bloody meal just to bulk it up.

I work 4 days a week and am out of the house from 8.45am until 4.30pm most days, except Thursday's when I'm out until 8.30pm

I need some excitement so please throw everything you have at me.

A few of my quick and healthy meals in rotation:

  • Chicken thighs roasted in oven with root veg, serve with cous cous (cooked by soaking with a stock cube for flavour) and/or a pitta bread and salad. Bit of greek yog and lemon for sauce
  • Stir fry with chicken or thin steak, half portion of noodles mixed up with veggies like bok choi, peppers, courgette
  • Tuna steak or salmon cooked in oven with cherry tomatoes and potatoes (cubed), serve with dollop of pesto and some salad
  • Veggie tart: puff pastry base, spread on thin layer of philly, add roasted med veg and herbs
  • Chorizo, chickpeas, onion and garlic fried up, chuck in tin of tomatoes for a bit of a stew - serve with bit of bread, cous cous or rice
  • Fry up chicken, onions and garlic, add to baking dish with shredded leeks, bit of stock and dollop of philly, bake in oven for 20 mins, then add pre-rolled puff pastry sheet and bake for another 20 mins
  • Endless amounts of slow cooker recipes e.g. curries, stews
  • Fill a baking tray with frozen peas, add some onion and leeks shredded, whole garlic cloves, salt and pepper, loads of olive oil, add some chicken thighs on the top and bake in oven for 40 mins (this is a nigella recipe)

Salmon - poached or roasted. Accompanied with couscous and mixed roasted veg (and a spoonful of pesto). I tend to put in courgettes, peppers and mushrooms.

Chicken wraps - slice chicken breast into bite-sized pieces, fry up with some kind of sauce (harissa is quite good, or chipotle), then put some in the centre of your wrap with lettuce, tomato, whatever - our whole family likes this, as can choose what goes inside (we also have grated cheese, jalapeno peppers, avocado, soured cream)

Greek chicken - pitta bread pocket with chicken breast marinated in greek yoghurt and lemon juice, then fill pocket with chicken, lettuce, tom, tzatziki, cucumber etc.

Prawn stir fry with loads of veg and some noodles.

Chilli

Soups and stews

Tarragon chicken...etc etc

I quite like the Lean in 15 books for these kinds of ideas though - they're super quick and simple (and largely common sense, but sometimes it's good to have someone remind you of options).

Sounds like my house OP but the kids don't eat rice! Watching with interest. Quick easy meals are what I need. My 10 year old is extremely fussy just now, I thought they were supposed to get better with age bot worse 😂

I'm a bit behind the times, but I have only recently discovered frozen mashed potato, and also, frozen mashed swede and carrot. It means making a shepherds pie or fish pie is really quick.
I don't know if your children are keen on salad, but a grilled steak, sliced really thinly after cooking, on top of a dressed salad, is v. quick and delicious. One steak does 2 people.
Have you got a slow cooker? I couldn't live without mine. A hot meal ready and waiting for you.

Its a nightmare, he is quite fussy and doesn't like any type of sauce or gravy so won't eat stews or soup and if do make one I end up giving him just the dry ingredients that he then complains about.
He's only just taken to eating spag bol, previously he would only eat plain pasta with a little bit of butter mixed in.

lucisky he does like salad and is quite a big meat eater so that sounds like it could be a winner.
I've also got a slow cooker, which I don't use as much as I should and yy to frozen mash I love it but again ds won't eat it because of the texture.
