Vegetarian Xmas meal ideas?

Does anyone have any recipes for Xmas dinner for my Dd13. It needs to be nut free and she doesnโ€™t like mushrooms ๐Ÿ™„๐Ÿ˜ Most recipes seem to contain nuts and/or mushroom based. She likes the Linda McCartney โ€˜beefโ€™ roast but I wanted to make something from scratch for her.

I came on to tell you the Quorn roasts are nice but that's not cooking from scratch Grin

That being said, I cannot stand stuff like nut roasts etc. That everyone attempts to serve at Christmas.

Mushroom wellington could be nice?

I use this lots from this site. And another favourite is cooking a load of veg (carrots, onions, peppers, celeriac, leeks, sweet potato etc) in a white or cheese sauce and topping with potato and a layer of cheese works well. Feeds the veggies and everyone else can have as a side dish.

There's a lovely lentil Wellington recipe on the BBC Good Food website.

Last year we did cauliflower steaks - dry fry, coat in egg and dry stuffing and bake. Surprisingly tasty.

I found a recipe for spinach roulade the year before, but can't remember where it was from.

BBC good food usually put out a vegetarian Christmas magazine.
Iโ€™ve made lots from there in the past.

Another good option is a filo pie.
Line a cake tin with filo. Chuck in chick peas, spinach, cheese and the like. Cover with more pastry and bake.

It's a bit labour intensive but so worth it .

I was coming on to suggest cauliflower steaks! I do them coated in parmesan and pepper.

On a related question, I have a couple of pescatarians coming, who would i think prefer fish to vegetarian. Any suggestions appreciated, ideally something that "goes" with the usual Christmas veg that i will be serving to the turkey eaters.
Last year I did salmon en croute and made the pastry look like a present. It went down well so may well do the same again if I'm stuck, but would be good to have some other suggestions.

Aldi have some nice frozen things in. I'm making the rainbow pie out of bbc good food (dec edition) which will be vegan

If you plan on using a recipe with parmesan, make sure the cheese is suitable for vegetarians. Proper parmesan is used making rennet (calf stomach).

For Christmas dinner, I will be having a massive plate of veg, roast pots (not roasted in goose fat Grin), roast parsnips, homemade stuffing and loads of bread sauce and cranberry sauce.

Do they like blue cheese? The River cottage sruffed squash with walnuts and blue cheese is amazing!
Other options are homade vegetarian pies I either do stilton and squash or brie cranberry and walnut. All tasty!

I used to do a Jamie Oliver red wine & chestnut (are chestnuts ok? You said not nuts but I'm allergic to peanuts, hazelnuts & brazils but can eat chestnuts) filo pie. Nominally it was the vegetarians - served alongside a trad roast - but the rest of it was always scoffed by meat eaters too. Will try to find recipe...

This was a real winner when I cooked it two years ago, and if there's anything on the ingredients list (for the stuffing that goes in the squash) that your daughter doesn't like, it's easy to adapt. Two of my children don't like cranberries, so I put little cubes of apple in, and it worked a treat.

  • Oh and meant to say, as it has to be nut free, just leave out the pistachio nuts. When I've cooked this subsequently, for Sunday dinner, I've left them out, as they didn't really add much to the taste!

I've been a veggie, since I was 12. The best bits of Christmas dinner for me have always been the veggies, the stuffing, the bread sauce and Veggie gravy.
The one year I had a nut roast at Christmas, I didn't appreciate it fully as it took away from the veggies.
Christmas dinner in my house - mum, step dad, fussy teen, veggie teen and me - lots of veggie gravy (with separate meat gravy), lots of veggies kept away from the meat (with a few cooked in the meat), veggie stuffing, veggie bread sauce and a bird.
The only change to our Christmas dinner since I became a veggie, is the separate veggie gravy. And that's the way both my veggie sister and I like it.
Ask your daughter what she wants to do and what she wants. She may surprise you.

Spinach and goat cheese open tart, make it with filo or puff pastry. You can use whatever cheese she likes if she's not keen on goat.

If she likes a quiche style filling with egg and cheese, asparagus quiche would be celebratory, or leek or broccoli are also tasty.

Oh, Iโ€™m making that goodwill pie this year - glad to hear itโ€™s great. Thereโ€™s an Anna Jones celeriac pie that I made last year - that was yummy too. Love Christmas dinner!!

I should have added before- I'm in the USA where you can buy vegetarian parmesan under the parmesan name. When I lived in the UK I bought Sainsbury's basics "Italian hard cheese", which uses vegetarian rennet but can't be called parmesan because of its EU DOP status.

If you want to keep it simple then cauliflower cheese goes well with a roast dinner. Iโ€™m veggie and would always opt for cauliflower cheese over a cauliflower โ€œsteakโ€, which Iโ€™ve never quite understood tbh. Love cauliflower, roasted, boiled, in salads. Do I think itโ€™s remotely steak like? No. I have no urge to eat a thick slab of it, itโ€™s a bit odd. Same goes for squash and jackfruit!
Like pp, I like all the non meat bits of Xmas dinner so donโ€™t really need a big veggie dish as well.
Iโ€™ve been veggie for a long time though so Iโ€™m old and jaded and a bit puzzled by these new fangled veggie ways Grin
