Trying to cut down on meat- can any veggies share weekly meal plans?

Unfortunately our oven is on the blink and so we're restricted to the hob and microwave, but I reckon that meat-free will actually be easier?

Not really what you are asking but I have recently substituted all my mince dishes with Quorn and extra veggies. Barely notice the difference so that would be a start.

Spag Bol with vegetarian mince or lentils, risotto with veg (roast squash is nice but in your case it could be steamed/boiled), egg fried rice with tofu (the firm kind, I like the smoked varieties), veg curry with red lentils, Thai green curry, pan fried halloumi with bulghar/couscous/salad, vegetable soup (add lentils for extra protein) with homemade cheesy scones.

Veggie stir fry with rice or noodles, eggs, spuds and baked beans, veggi curry with green lentils, pasta with pesto and green beans, veggi chilli with tacos, home made pizza, veggi casserole with herby dumplings.

My stand by/surprising winner dinner is 'bean surprise'.

The 'base' recipe is soften an onion (brown or red, your choice), add some sliced pepper and continue to cook, add a can of chick peas with half the liquid, then a jar of Lloyd Grosman chilli & tomato pasta sauce, simmer for 5-10mins and voila. One pan on a hob.

Enhancements include cubed chorizo, pancetta, bacon, stray veg, tin of chopped tomatoes/homemade sauce in lieu of Lloyds, whatever you have in the fridge...

I made it as a random dinner once and it's now one of my husband's favourites 😅

Not veggie but we do at least 4 meals meat free a week:

Omelettes and salad
Veggie soup and bread
Baked potato/sweet potato, baked beans, cheese and salad
Daal
Veggie curry
Pasta with tomato or veg sauce
Felafel in pita with salad
Stir fry
Grain- or cheese-based salads
Lentil Bolognese or cottage pie

We had mutter paneer (pea and cheese curry) this week which is a family favourite. It’s one of my favourite meals full stop. I use the recipe below with the following modifications:
DO NOT substitute tofu, it would be really odd (and I love tofu)
Use shop bought paneer and substitute the whey for a tin of coconut milk.

Let the sauce bubble until it thickens and looks luscious
Put the paneer in first five minutes before the peas

A simple daal is really easy and surprisingly tasty given how few ingredients are involved. You just boil the lentils (no need to soak) and then in the last ten minutes soften an onion in a separate small frying pan, add your spices, stir until aromatic and then add to the lentils. Serve with rice and steamed green vegetables.

If you Google Madhur Jaffrey daal her version is online.

There are lots of other good veggie recipes from that part of the world because they have a whole tradition of eating without meat so they know what works.

Veggie tacos are good as well - just use quorn instead of mince, and you can heat up a tin of refried beans too.

My favourite quick veggie meal though is spicy scrambled eggs - fry spring onions and chilli, add cumin seeds and mustard seeds and fry till till they pop, add chopped tomatoes (fresh or tinned), soften for ten minutes, beat eggs then add them to the pan and scramble. It's really nice! Great with eg sauteed potatoes, or even just flatbread and salad.

Another recent discovery- sheet nachos with Refried beans, guacamole, salsa and cheese. I cheat and make guacamole by mashing an avocado with some sriracha chilli sauce Grin

we had chilli con (fake) carne made with soy 'meat' chunks.
very tasty.
red lentils are also good for a mince like texture.

We do chickpea curry, bean chilli, veggie lasagne and pasta with feta, red onion, sun dried tomatoes and either red pesto or sun dried tomato paste.
