Mushroom and chestnut loaf x2
Lentil bake.
Ham platter
Chicken platter
Large pasta or rice salad
Coleslaw
Large garden salad
Bread/buns

Pizza for kids

Cheesecake
Small chocolate mousses
Birthday cake(s)

I think it sounds really nice.

I would add crudités and dips.

And I'd be wary about leaving chocolate mousse (assuming the real thing made with raw egg) out at room temperature

You definitely need sausages rolls and frankly I’m surprised you thought you could do a party without them! A bowl of green leaves (rocket, spinach, watercress) too

Other than that whatyou planned to serve is fine, better to do a few things of nice quality than too many dishes.

OP: go with your instincts on this. Fewer choices but good ones.
From your list:

Mushroom and chestnut loaf x2
Lentil bake.
Ham platter
Chicken platter
Large pasta or rice salad
Coleslaw
Large garden salad
Bread/buns

Pizza for kids

Cheesecake
Small chocolate mousses
Birthday cake(s)

I's swap the bread rolls for jacket potatoes so everyone gets a choice of 2/4 protein things, some veggies, potato or rice.
Then dessert.

Do the kids really need their own food? If so I'd add cocktail sausages and cherry tomatoes to the pizzas.

Otherwise that really is plenty of food.
