How do YOU make cheese omelettes?

I’ve got a mad craving for a cheese omelette but I’ve never been able to crack it, mine always end up being a gooey mess. Anyone got a foolproof method?

Three eggs, splash of milk, bit of grated parmesan, some salt/pepper and beat. Pour into hot pan and then when it's very almost set, flip it over. Grated cheese of choice on one half of the cooked side and then fold the other side over (so you get a semi-circle). The gooey side has had a few seconds contact with the pan so isn't gooey any more and the cheese melts inside the folded over omelette.

Sometimes when I'm hungover I put some cooked bacon and some beans on top of the cheese before I fold it over.

Make a plain omelette and put the cheese on top just before it finishes cooking in the pan. Fold it over and give the cheese a minute to melt inside it. If you mix the cheese in with the egg before cooking it makes the mixture too gloopy.

Like that but I don't flip it, I put grated cheese over the surface when it's still a little bit runny, fold it and let it cook a minute more. The cheese is melted but the inside is still just a little bit runny.

Next level: tenderstem broccoli and cheddar omelette. Heaven!

DP puts cheese on top before it finishes cooking, then sticks it under the grill to cook the top (he likes the way it puffs up). No folding.

I am too lazy for that so I just sprinkle the cheese in immediately after I put the beaten eggs in the pan, then flip it to finish cooking. Also no folding.

If it's flipped, I don't think it is an omlette.

I beat two large eggs with salt and pepper. Heat a knob of butter to foaming point and pour the beaten egg in. Leave for a minute or so then push the mix to the centre in three places and tip the pan so it spreads flat again. Grate cheese over the top (if it's parmesan or similar), or put in cubes/wodges (if it's emmental or similar). I usually do a mix of parmesan and soft cheese. Fold as you slip it out of the pan.

Dh used to share a house with a chef when I first met him and he used to grill the top of an omelette rather than flip it. I do that as it works well and browns the cheese. I add cooked potato and onion to mine as well as cheese.

I do the same as spider, plain omelette, grate on cheese at the end and fold over for the last bit until it melts.

2 eggs beaten, pour into a decent frying pan.
Let it cook, add grated cheese, allow to melt a little, finish off under grill.

Fold into 3 and serve.

I fry some onions to go in the egg part. Add seasoned beaten eggs and cook until still a little gooey in the middle. Add cheese fold over and eat.

I agree with plain omelette but before totally cooked add the grated cheese and fold over.

I was just going to get up and have boiled eggs and toast, I'll now be having cheese omelette. Enjoy yours OP!

I always add grated cheese to the whisked eggs before cooking. Then pour the lot into a buttered fry pan , and cook as a normal omelette.

Ohh I could kill for a cheese omelette right now! I love a cheddar and Onion omelette with a splash of Worcester sauce. If I'm not mixing loads of other veg into it I would cook it til it's almost done, flip it, add cheese and fold as a pop mentioned. But one of my favourite omelettes is mixed veg, peas, onion, smoked ham, Worcester sauce and throw some soft goats cheese on top before folding.

Grate cheese.

Make omelette as normal. When still just a little runny on top tip cheese on top of omelette and fold top over.

Serve.

3 eggs, salt and pepper. Beat. Pour into hot pan with a bit of butter melted . Let cook for a bit then pull sides in several times til.almost done. Grate cheese over and fold in half.

Wondering if I have been making mine wrong!

I slice the cheese thinly and add it to the whisked eggs before sloshing it all into the pan.

Grated mature cheddar and parmesan ready. Whisk three large eggs, dry of milk add salt and black pepper. Heat up your butter in a non-stick pan, tip your mixture in and sprinkle with cheese. Immediately loosen the edges and allow the mixture to spill over, repeat, repeat, repeat until the mixture is setting. Fold in half and serve.

2 eggs, splash of cold water, whisked.
Buttered frying pan on medium heat.
Pour in egg
Once bottom is firm (ooeer missus) pop under grill.
Once top is firm but not brown, back on hob, throw chopped ham and grated cheese on top and cook bottom
Back under grill to brown cheese.
Slide onto plate and top with black pepper and a spiral of BBQ sauce.

I am another one who finishes it off under the grill rather than flipping it.
I usually fry some onions in the pan before adding three beaten eggs. Keep breaking up the edges and allowing the liquid to spill into the gaps until it’s almost set. Transfer pan under hot grill. When the top is set but not brown add grated cheese. Couple more minutes to melt the cheese then fold and serve.
Tomorrow’s tea sorted.

I don't have a grill so I cannot grill the top which is the way I like to do it best

so instead I make them on a really large griddle....it fits over two gas burners, I get it really hot and then pretty much turn it off and the eggs cook in the residual heat. It gives you a thin omelette, but plenty of filling

Just eggs, plenty of S&P, three or four eggs covers the griddle nicely, and then once the bottom has coloured I put the grated cheese over the bottom two thirds, fold the top third down, and then fold that over again
egg, cheese, egg, cheese, egg!!

No milk in the eggs and plenty of butter on the griddle.
