Have overcooked a cauliflower stir fry - how to crispen up

I did a curried culiflower stir fry last night (just cauliflower and red onion with cumin seeds) as a side dish for eating tonight with friends.

However, I overcooked it a bit and it's a bit soft instead of lovely and crisp. Probably because the pan held its heat for a long time and because I added more than a splash of liquid when the cauliflower started to stick.

So what's the best solution:

  • put in the oven to crisp up?
  • under the grill? or
  • drain and toss in a super hot pan?

Not sure if oven / will just end up cooking it even more...

I suspect that there isn't anything you can do that will make the cauliflower crisper - I know that when I make cauliflower cheese, and part cook the cauliflower first, it softens more when I finish off cooking it in the oven, so I suspect that grilling or oven baking it will just make it softer, so though it may give you a slightly crisper top to the dish, underneath will be even softer.

Could you add something with a bit more bite to the dish? Shallow fry onion until crisp, and top it with that, or add something like some chick peas, which will give a bit more texture?

Ah, OK.

I will have to heat it up anyway to serve warm - so maybe just to put in a super hot pan for a couple of minutes. I had thought grilling might do the trick but I guess it will be just the top that would crisp up

It's a shame I've spoilt it. When I've done it before in a regular wok, it's been fine and with bite.

However, cooking in my over expensive super heat retaining ceramic pan was a bit of a mistake ...
