I just made lentil soup...

I won't send a picture because lentil soup isn't the most aesthetically pleasing dish, but it's so yummy!
Just wanted to share this with someone.Grin
I'll even give you the recipe if you want it.

Whatever vinegar you like! I had dark balsamic vinegar, but my grandma even puts leftover sauerkraut in if she has some. It's all about the acidity

I have lentil soup for lunch most days at work. I use carrots leeks sweet potato or butternut squash and red lentils boil them up with some stock and blend. I put them in little pots like you've done and freeze them and take one in each day and defrost in the microwave it's absolutely delicious.

To extend it further, I add a tin of drained chick peas or haricot beans (or both if a lot of people to feed) right at the end, and just warm through. Still freezes perfectly.

My latest lentil soup recipe is - red lentils, onion, carrots and sweet potato, flavoured with garlic, cumin, smoked paprika and coriander. Served with wholemeal bread, such a cheap filling and nutritious meal.

My go to lentil soup is a carrot and red lentil one with some grated lemon zest in it, finished off with some lemon juice stirred through at the end.

Make it Turkish and add mint and chilli. Then a squeeze of lemon when you eat it Smile

Also you can add chilli, garlic, cumin, lemongrass, fresh ginger, corriander, lime juice and coconut milk to make it Thai flavour - yummy!

Top tip

Buy your lentils at the foreign food section of the supermarket where they’ll be about two-thirds of the price of the lentils next to the split peas and soup mix.

I once had to make a meal for someone with 15 minutes notice. I started to defrost some cooked red lentils. As they walked in I was adding grated carrot and wondering what else to add. They dipped in a spoon and tasted it before I could stop them and declared it delicious! I tried it and they were right. We ate it 5 mins later with the carrots just cooked.
They also asked what spices i had used Grin
Red lentils are little energy bombs packed with flavour!

If you use jars of jalapenos, the liquid - which is basically spicey vinegar liquid - is great in soups and sauces.

This is really yummy, cheap-ish and filling if you like dhal, which is basically lentil curry, so a bit stiffer than soup.

These are all great ideas, especially about the carrots since I have a bunch to use up. I’m putting lentil soup on the meal plan this week and will freeze some.
