Pregnant and tired - meal ideas ? (Veggie)

Okay so I've realised my veggie diet is a bit rubbish and at 29 weeks pregnant I'm getting the first trimester tiredness back and I want to fight it off. If I can!

So I am put off a few foods so really been having cheese on toast for brekkie and more sandwiches for lunch and feel I never actually eat any vegetables anymore!

I've thought of a breakfast- omelette with spinach and mushroom, that kind of thing.

So any ideas, I want to try and have cheese only once a day now, it used to make me feel better now it's making me fat!

Veggie smoothie/shakes.
Soups.
Fajitas with quorn and fried mixed peppers, mushrooms, onion etc.
Greek yogurt and mixed berries for breakfast.

Eggs are good for breakfast.

I find sandwiches really dull so I make bigger dinners and take some for lunch.
I eat loads of vegetable chilli, curry and stir fries. Dal is good for making big batches of and freezing portions.

For basically any meal, frittata is really good. You can make a big one and slice it up.

Green leafy vegetables, lentils, chickpeas, beans (red kidney beans) nuts, seeds, raisins and dried apricots are all good tiredness busters. Sweet potatoes and eggs are also recommended for pregnancy.
As you say, omelettes with spinach are a good idea. A muesli high in nuts, seeds and raisins would also be good.
For lunch, you could have a hummus and red pepper wrap with or without falafel. Other options:
Soup with lentils, beans or chickpeas
Frittata

Bean burgers
Veggie chilli

Stuff with iron in.

Eat the iron rich foods WITH vitamin C rich foods but APART from dairy foods, tea and coffee to improve absorption.

This is a great recipe, imo. My tweaks:

  • mix red lentils and puy lentils.
  • Add the tin of coconut milk at the same time as stock
  • instead of spices, I put in a spoon of Patak's tikka masala paste
  • cook on smaller gas ring/low heat for about 40min.

Another one is mushroom and chickpea stew. I roughly halve this recipe. You can add spinach towards the end but that does make it a bit more watery. Or steam spinach in microwave and squeeze, then add. I omit tomato paste as I don't like the taste (it's a lot!) and it tastes fine.

I am not veggie but was mad for baked potato beans and cheese through out my pregnancy and that did help with tiredness. It's a funny time and eat what you fancy
