Have to leave at very latest at 1240 to take DC to tournament. Ideas for a quick and easy Sunday lunch please!

Buy a rotisserie chicken from the supermarket.
Boil baby potatoes/veg.
Quick, healthly and filling.
If they are playing sports, chuck a bowl of chopped banana and custard at them for pudding.

Chicken pieces (drumsticks or Marylands) in an oven tray. Add baby potatoes, sliced chorizo, diced peppers, sliced red onions. Add the zest and juice of an orange and some chopped oregano (and a splash of sherry if you like) and bake. It's good 😊

Toad in the hole and a load of veg. My kids love it.

Chicken tray bake? Chicken pieces, red peppers, onions, any other root veg you like, potatoes cut in to large cubes, add dollop good quality olive oil and mix with hands. Maybe add some mini sausages, black olives. bit of thyme, s&p, maybe a bit of cumin or coriander, splash of white wine or chicken stock. Bung in oven 180 ish and cook for 50 mins to an hour depending on size of chicken pieces. Very easy to prep: one dish and mainly an assembly job.

Tray bake: cube potatoes and cover in oil, salt, rosemary. Add whole cloves of garlic. Spatchcock a chicken (very easy if you've not done before), lay on top, cut a lemon in half and add. Salt and pepper to taste. Boil some extra veg.

Staringcoat · 02/11/2018 06:07

This sort of thing!. Hotter oven than I said so more like 200 than 180 sorry!

Callmecordelia · 02/11/2018 06:17

Here's a variation on the chicken traybake that's got a stuffing flavoured marinade, so it tastes like Sunday lunch. You put it in its marinade the night before, so when you want to cook it you just tip it into a roasting tray. I think the cooking time as given in the recipe is a bit long, I'd give it an hour and do some simple green veg alongside.

Sorry, forgot to add - I'd either boil some new potatoes that I just pour out of a bag to go with it, or put some diced potatoes in a smudge of oil in the oven alongside, but you may feel like you've got enough to do without that!

Staringcoat · 02/11/2018 06:23

.

Love the look of that Nigella tray bake - very clever - definitely going to give it a go this weekend! Might make some bread sauce with it!

MrsPnut · 02/11/2018 06:47

We have the Nigella chicken and sausage traybake regularly.

egg and chips, being a sunday is irrelevant.
