Using sharp knives?

When have you let your child start using the sharp knives - you know, to cut veg etc. I haven't let mine and don't feel comfortable really but she wants to help me cook and this stops her helping me. She's 5

I let her grate cheese. Which I also wondered if other people do at this age?

My five year old uses the scissors a bit and also grates (I'm stood over him). The knife seems a bit too difficult right now though. A dinner table knife in soft cheese would be fine, but not a sharp one.

my daughter is 4.5 and I sometimes let her chop using a tiny sharp knife when I properly hover and adjust her grip if she goes too close. courgette, carrot, cucumber.

I also let her chop banana and strawberries with table knife without supervision so she's getting practice.

I have just wondered if maybe I should let her... Then I think she could really hurt herself on a knife...

I still hate watching my two lads (20 &17) use sharp knives,
they are both left handed, but they both look so awkward 
I really have to stop myself from taking over and doing it for them

Oh I don't think I'm like that lol. I think I'm fairly laid back about stuff in general but thought it'd be interesting to know when other people let their children do this
