Just because it's brilliant - Stem ginger. Any other tips

I wanted to make a ginger cake today. Need 4 lumps of stem ginger in syrup chopped really small.

Looking for a easier way, so crushed them with the garlic crusher.

Brilliant, ginger tiny and evenly distributed throughout, and the cake was lovely too.

Anyone else goty any tips like this?

I buy frozen grated ginger from the supermarket. Also frozen garlic and onions.

I never have to cut, dice, chop any of them and don't end up with half a mouldy onion lingering at the back of the fridge

And then make drizzly ginger icing by mixing the syrup with icing sugar.

If I had a garlic press this would be great, I usually make a stick mess with stem ginger. Root ginger I keep in the freezer and grate it frozen. It’s easier to grate and lasts indefinitely.

I like grating things, and grate carrots, courgette and onion regularly.

I'm in Spain and our supermarkets are way way smaller than in the UK and we don't have things like frozen garlic and ginger.
Although grating and freezing in icecube tray I will try. I make mint ice cubes for summer drinks already, so it's easy enough, can't believe I never thought of it!

I've never even seen stem ginger in syrup here. My DP's sent me a package with a jar in with a load of different spices. Genius DP's.

But that’s a good tip.
I use it really finely chopped (although you could crush it) in a white chocolate, lime and ginger cheesecake.
Might make one tomorrow now I’ve thought about it!

I have just amended my tesco order that's being delivered tomorrow to add a jar of stem ginger! I just eat them whole from the jar! A favourite family treat growing up was a ball of stem ginger with vanilla ice cream and a bit of the syrup poured over it. mmmm ginger

The best ice cream I ever had was a ginger ice cream in a little cove in Dorset over a decade ago. That had stem ginger in and was bloody lovely.

I'm going to have to find some here.

Freeze whole ginger roots. Grate from frozen (you don’t even need to peel if it’s for savoury)

I use my micro plane heater for garlic too.

I'm definitely going to get a ginger root on Monday and freeze it!

I have no idea what a micro plane heater is, but I'm going to google.

Stem ginger in syrup and fresh are different things.
I poke a fork in stem to chop it.

Totally blamethewitchescat, I love both. Stem ginger is a rare treat for me though and it's not at all common here (never seen it), root ginger is everywhere.

The ginger syrup is gorgeous on porridge. And obviously ruins the health benefits of porridge... worth it though.

I can’t believe anyone enjoys grating. I love lemony cakes but hate finely grating the zest. Why can’t I buy ready grated lemons?

These are many two favourite stem ginger recipes:

Stem ginger and oat cookies

Sticky chilli and ginger salmon Serve with steamed rice and stir fry veg.

I've never made a ginger cake before...must sort that out!

It was amazing. They will definitely be sending me more stem ginger and spices!

I made this before. A sugar free banana bread, and it was good cheaptastyandeasy.wordpress.com/banana-bread/
I might try it again and add some ginger in it. I can only imagine it would add to the loveliness!

Same here. i buy a big stick of ginger then cut it into approximately 1-1.5 oz sizes and freeze. I've only ever come across recipes asking for 1 oz. Reading this I may peel it first as it is a pain to do when frozen. I grate it too with my parmesan grater.

I buy fresh herbs and freeze the leftovers all the time.
