Lasagna, what makes yours stand out from the norm?

So got my mince, onion and garlic on. Just thinking it's abit boring whatelse other than toms, seasoning can I add

Always put in carrots, onions, courgette, peppers and whatever veg needs used up, as well as mince.

Also fry chorizo first before adding tye mince. Tastes amazing

My SIL does this. She’s Italian. It’s 🤢

I keep it simple with mince, onion, sometimes mushrooms, cheat with a Coleman’s bolognese mix. I do make my own white sauce and add loads of cheese, especially on top, and a dusting of paprika. Cook low and slow. It always taste better the next day.

1/2 beef and 1/2 pork mince, fresh basil, good passers not chopped toms (too watery), Dijon and Parmesan in the white sauce.

I make pasta verde (food processor and rolling pin, no fancy equipment) as I prefer it in lasagne.

Also add freshly grated nutmeg and bay leaves to the béchamel. I rub the pan with a cut garlic clove before making it.

I throw a parmesan rind into the ragu and a little vinegar. My mother makes it with milk and many, many bay leaves Grin

If I'm cooking for the children, I add tons of vegetables, but mainly focus on adding layers of nuanced flavours (like the bay and vinegar), good salt and pepper, and not rushing it - the béchamel needs time to cook down, as well as the ragu.

I also dry mushrooms throughout the year and grind to a powder to use in lasagne etc. It's a nice way of getting another layer of flavour.
