Can anyone recommend a good chilli recipe

I love chilli, however not had it in yrs and also never made it as OH hates kidney beans or anything spicey. But I have decided I am going to make one and freeze it in batches for when I fancy it.

We're having chilli tonight! I use the BBC Good Food recipe as a starting point, but add chorizo, use baked beans rather than kidney beans and stick a bit of chocolate in at the end. Cook it for at least an hour or so, and make it the day before - just seen you're freezing in batches so that works perfectly!

I use the BBC recipe too, I do it in the slow cooker using half the stock. Still brown the veg, spices and meat and then just put everything in the slow cooker. It's lovely. Next time I'm try with streak instead of mince.

I could never manage to make a decent chilli until I came across this BBC Good Food recipe (might be the one previous posters use?). It's absolutely foolproof, ridiculously easy and so tasty. I've made it countless times and it never fails me. Freezes brilliantly too.

Incidentally I leave out the kidney beans as they're not my favourite type of bean - sometimes I add little black beans instead but it works fine just with the meat.

Mmm, now I want chilli ...

I have a tip, whichever recipie you are following; really seat the meat until it has a crust , rather than steaming it to a grey brown colour. To achieve this I soften onion and garlic in sauceoan on one burner while heating nonstick frying pan to vvv hot on another and searing the meat with no oil and minimal stirring. I do in a few batches and as done add it to the onion. It makes the sauce much meatier and if you are short of time it adds depth of flavour more quickly.

Beef Mince, frozen chopped onion and peppers, jar of red hot and sweet jalapeños (juice and all), 2 oxo cubes and and a teaspoon of thyme.

Mix together in slow cooker and cook on low for 8 hours!

It’s sooooo good!

I have a really long involved Texan one where you start by soaking the beans overnight in stock. You cook everything separately: the beans, the meat and the sauce and then you combine them. It's not a weekday job. But it turned out to be the best chilli I'd ever tasted.

I love the hairy biker’s recipe! I also add baked beans. The idea of adding a bit of dark chocolate sounds great though! Might try it

Brown mince no oil, add onions and garlic and fry, add cumin and chilli powder fry, add blitzed up sun-dried tomatoes fry, add 2 tins chopped tomatoes, 2 tins kidney beans, cinamon stick, couple of cubes dark chocolate, tin of water, salt and pepper. Pop in oven on 160 for 3 + hours adding water if needed

I also add a teaspoon of plain cocoa powder.
For extra spice I double the quantity of dry seasonings.
Low heat in a big saucepan for 2 hours.

My receipe for fabulous chilli: For four (or two extremely hungry people, or for leftovers) - heat a little oil on medium heat for a couple of minutes. Add two crushed garlic cloves and fry them for a minute or so. Add one big, or two small chopped onions and fry til onions are soft. In a different pot, cook a big pack of mince. Drain water and fat off when cooked and add to the onion - garlic pan. Add a big jar of passata, or two tins chopped tomatoes, or two cardboard packs of those tomatoes with various herbs - whatever you like. Add a big squeeze of tomato puree. Add lots of chilli powder. Simmer for a long time - the longer the better. If it gets dry, add more tomatoes or water. After it has simmered for at least 30 minutes add a tin of kidney beans, with the liquid. It is starchy and thickens it up. Stir in, simmer more if possible. Add a generous splash of either Worcestershire sauce or balsamic vinegar (preferably both) to the mix. Simmer more. Add dried mixed herbs, salt and pepper to taste. Simmer again (are you sensing a theme here!) Serve with rice and await compliments. Even better fridged and reheated the next day!

A Girl Called Jack has a recipe for a veggie chilli that I add mince too in place of baked beans, but she also has a chilli SOUP in that book which is OM flipping G amazing!!!
