Does anyone know a foolproof, delicious Eve’s pudding recipe?

I’ve never made one before and have all the ingredients. There are so many recipes online I don’t know which to choose. If you make it can you let me have your recipe please? Thank you.

My one comes from the good old Dairy Diary 80s cook book.

Peel and slice apple and put in the bottom of a dish with a bit of sugar and cinnamon etc.
Get two eggs. Weigh the eggs with shells. Whatever they weigh use that weight of butter, sugar and self raising flour. Cream the butter and sugar, mix in the eggs and flour, dollop on top of the apple and cook at 180 for some time.

Yes, that's what I do too, standard sponge cake mixture on top of sliced apples and sugar (no cinnamon though) in a pyrex dish, bake at 180 for about 20 mins or until the sponge is cooked. .

Looks like we all use the same recipe! Standard Victoria sponge mix on top of sliced cooking apples. Add cinnamon or allspice or nutmeg to personal taste.

Serve with custard.

We had it a couple of weeks ago, first time my DCs had heard of it, got the idea from flicking through the Be-Ro cookbook.

It’s come out beautifully. Soooo delicious. I cooked the apples first and made the sponge with 2 eggs and 100 g each of butter, sugar, self raising flour. I put some lemon juice in with the apples to stop them discolouring and grated the rind into the sponge mix. I don’t know why I haven’t thought of making this before because it’s so easy. Thanks for the recipe sausage

It's my favourite. I use the old Bero one too.

Stew the apples and use a good old Victoria sponge for the topping.

Well the EP was huge success. my Friend ate a ridiculously huge bowlful. I gave him a helping to
Give to his DM and there was some left for tomorrow for me. So I’d say it made 4/5 servings 😋

I’ve just realised that the recipe I posted requires you to turn to another page for the sponge topping, well it’s just basic sponge mix.

I do the same as sausage but I often replace the apples with canned apricots (2 tins, drain juice) it's delicious. Or any other fruit filling really.
