Can I have your foolproof toad in the hole recipe please?

Mine always goes wrong so I'm looking for a better recipe.

Also keen to hear what people cook them in/ how much oil as I wonder if that is where I'm going wrong. I have tried every type of tin/Pyrex dish I have and it's still never great Sad

Flour, eggs and milk, quantities are irrelevant it’s texture you need. Mix together to a light trace.

I use a regular roasting tray. Quite a lot of oil, heat the oil and pan on the hob first

I usually just give it a quick whisk together, does it need more than that then?

Brown off sausages. Pick a cup. A smallish one. Fill it with plain flour. Dump that into a bowl. Then fill the same cup with very cold mix of milk and water. Dump that into the bowl. Then fill the same cup up with eggs. Dump the eggs into the bowl. Add another egg for good measure. Season with salt and pepper, give it a bloody good whisking then leave it in he fridge for a while. Get your roasting tray with a oil in it. Not too much, enough to cover the whole internal surface. Get it smoking hot. Take it out of the oven when smoking, pour in the batter and quickly throw in the sausages. Put it back in the oven on 220c for about 25 mins. Don't open the oven door until it's done.

I tend to cook the sausages and Yorkshire separately, otherwise the batter sticks and doesn’t go crispy with the sticky sausage juice in the bottom.

So cook the sausages for 20 mins first, then either cook the pudding in a new tin on its own, or transfer the sausages to the clean tin.

If I’m in a rush I make small ones in a muffin tin with 1/3 sausage in each one.

Oh, you need to use lard, not oil. It has a higher smoke point.

@MelonBuffet - extra eggs. You can't really use too many in a Yorkshire batter mix! Always add at least one more than the recipe says.

@Shmithecat thank you! I used your cup recipe and it was the most successful toad in the hole I have ever made. It was much yellower than my usual batter which I guess was the extra eggs.

@Shmithecat - another vote of thanks from here. I used your ratios yesterday and ended up with a monstous Toad in the Hole! I thought about using a large baking tray and thought better of it as I thought there wouldn't be enough batter. As it was it was escaping in all directions! Next time, I'm using the baking tray!!!!!
