What are you favourite cheese recipes please?

Ideally veggie if possible. DD wont be having dinner with us tomorrow which means we have have all the dairy products. I’m very excited but can’t decide what to cook. I think macaroni cheese might be a bit sickly. What would you have?

wellfuckme look in the centre aisles of wondrous stuff near Christmas in Aldi, when the world christmas speciality stuff is there - lightly smoked unicorn slices from Bavaria are, well, a magical taste WinkGrin

Can I do macaroni cheese in the slow cooker?
Would I just put dried macaroni in with a cheese sauce, and some chees and go off to work for a bit ? Grin Or are you going to break it to me that it wouldn't work like that ?

BackforGood I've made macaroni cheese in the slow cooker before using . It wasn't the best macaroni cheese I've ever had, but nice enough.

I've posted this one before & it is a real winter comfort dish:

Butter beans & Bacon (for 2 people).

I tin butter beans, drained & rinsed.

Half a pint of cheese sauce made with a good strong cheddar + a tsp of Dijon mustard.

6 (or so) thin cut rashers of streaky bacon.

Heat the butter beans in the cheese sauce until piping hot. Put them in a flat ovenproof dish (or a couple of of individual chafing dishes) , put the bacon on top & put under the grill until the bacon is done - less than 5 mins.

Serve with crusty bread and/or salad.

V calorific, v easy & v comforting. A British tartiflette??

A glass of very cold white wine raises this to ambrosial!

Lemon and feta spaghetti

White wine(optional)
Spoon Of garlic butter
Quartered lemons
Diced tomatoes
Spaghetti
Feta
Red onion

Cook your spaghetti
Fry onion in a pan add white wine and lemons simmer for a while.
Add feta , garlic butter and tomatoes
Toss in the spaghetti cook for a few minutes and serve . You can add olives too if you like them

I'd honestly just do a cheeseboard with a posh cracker selection, celery, grapes, beetroot, figs, raisins, chutneys, pates etc.

Or a puff pastry tart thing with bacon, leek and goats cheese, drizzled with balsamic vinegar.

Some great ideas here that I will keep for future! Here is my delicious bake recipe - this is for a crowd, but you can cut it down easily. Also works brilliantly for leftovers. Can be prepped in advance so more fun time for you :)

Mushroom and Egg Bake (Overnight!)
3 tbsp. butter
1/3 cup all-purpose flour
1 1/2 cups milk
4.5 oz sliced mushrooms
10 eggs
2/3 cup half and half
¼ tsp salt
1/8 tsp pepper
½ - 1 large red onion, chopped roughly
Grated cheese to taste (I used strong cheddar)

Night before: In saucepan melt 3 tbsp. butter, stir in flour until smooth, and gradually add milk. Bring to boil, cook and stir for 2 minutes or until thickened. Stir in raw mushrooms, set aside.
Cook onion until caramelized. Layer in bottom of greased baking dish. Spread mushroom sauce over onion. Grate cheddar on top, to taste. Cover and refrigerate overnight.

In separate bowl, mix eggs, salt, pepper and half and half. Cover and refrigerate overnight.

Next morning (or several hours later): Remove from refrigerator 30 minutes before baking. Stir eggs, pour over mushroom mix. Bake uncovered at 325 for 30-35 minutes or until nicely browned and puffy. Yield 10/12 servings.

Feel free to mix it up and add or omit ingredients as you wish. Bacon/sausage/peppers/corn/peas? Any and all would be good. Enjoy!
