Help! How can I make icing with hot chocolate powder (urgent!)

I am an idiot and did not check I had enough cocoa before starting. Consequently I have used every last scrap for the cake (which is in the oven) but have none left for the icing.

I've tried googling but every result I have found seems to involve either double cream (don't have) or a mix of hot choc powder and cocoa.

The recipe I was going to use was cocoa powder, cream cheese, butter and icing sugar - and I have all of those things except the cocoa (obviously).

Help!

Forgot to add - on any other day I'd go to the shop. But it's Sunday

Cut down on the sugar you put in it. What kind of hot choc is it (ie hilights etc)

Lweji · 07/10/2018 19:18

I just do butter, icing sugar, and one egg white. Then add as much hot chocolate powder as necessary. You may need less sugar.

I would make a simple buttercream icing and then dust on the hot chocolate after icing.

Do you have a bar of chocolate? Or vanilla essence? Granulated sugar?

If you have a bar of chocolate you can melt that and mix with butter and icing sugar to make slightly fudgy chocolate icing (yum).

Or you could do vanilla icing?

Or what about doing salted caramel? You could make a simple caramel with granulated sugar then mix that into plain buttercream with a bit of sea salt.

If it's full fat hot chocolate powder I would just substitute for the icing sugar-or at least for some of it. If it's made with sweeteners not sugar, I would make vanilla or coffee icing instead.

ResistanceIsNecessary · 07/10/2018 19:25

No chocolate at all unfortunately. The hot chocolate is a 'thick' spanish style hot choc mix (which is yum BTW). Quite happy to use it but conscious that the amount of icing sugar needed will be less because the of the sweetness of the hot choc.

I don't have any granulated sugar (we don't tend to use it!) so caramel is out. I may just have to resort to a vanilla buttercream.

Just make vanilla buttercream instead.

Hot chocolate powder tends to be a mix of cocoa powder, sugar and milk powder. You'd need to use more of it than you would cocoa, and cut down the sugar a little.

Only problem will be that the sugar in hot chocolate powder will be granulated rather than finely ground like icing sugar. It won't work unless you get it finely ground, unless the recipe involves cooking so that the sugar dissolves.

OOOOH - coffee icing. YUM! I have a wee bit of coffee in the choc cake mix already so that could work.

How much? Or is it make a buttercream and add to taste??

Could do caramel with caster sugar if that helps at all? (Probably should tbh - but I tend to use granulated because we normally have it in).

Your hot choc sounds amazing by the way.

It really is. Asda used to sell it and then stopped, the bloody bastards. I buy it from Amazon now but every so often Aldi have it in as a special buy and I swoop in and buy loads of it (not even joking - I filled a trolley last time!!)

This is the stuff: www.amazon.co.uk/Spanish-Chocolate-Company-Thick-Drink/dp/B01008C8EM/ref=pd_lpo_vtph_325_tr_t_2?psc=1&_encoding=UTF8&tag=mumsnetforum-21&refRID=BWS8EB0B2VBVR54RAFWZ

Peppermint flavoured icing is great with chocolate cake if you have peppermint essence and a little green colouring.

Buggerbrexit · 07/10/2018 19:31

make The buttercream with espresso

Buggerbrexit · 07/10/2018 19:32

Oh I’m an idiot, the clue is in butter cream, eh. Add to taste but make sure it’s coffee powder or espresso.

AdaColeman · 07/10/2018 19:36

Make coffee icing instead, a lovely classic combination.

RandomMess · 07/10/2018 19:39

Oh Spanish Hot Chocolate Envy

You lot are bloody brilliant - thank you! MN at its finest; where else can you get emergency baking advice on a Sunday night? Grin

Cakes are out and cooling. I'll come back and update once I have iced them.

Completely forgot to come back last night Blush

Cake was very nice - I kept the coffee quite light and it went really well with the chocolate. Thank you for saving my Sunday night dessert!!
