Aubergine SOS!

For some reason, I always insist on buying aubergines despite not really liking them. I normally end up eating them "on the turn" because they are the last thing I fancy eating. The following are typical dishes we have:

Moussaka
Stuffed aubergines (with mince, tomato, cheese...)
Roasted with peppers, sweet potato, etc as an accompaniment

Please help me expand my aubergine repertoire! They must be eaten today and I'd rather have them mixed in with other foods to hide the taste!

This Japanese aubergine recipe is addictive, I cook an aubergine per adult and have it over rice or quinoa. It's also delicious cold the next day for lunch.

I haven't tried this recipe yet, it's next on my last for aubergines, once I'm bored of the first one never

Bacon aubergine pasta- is absolutely yum! Cube up aubergine and brown in olive oil. Add diced up bacon and fry off, then add a tin of plum tomatoes and some chilli flakes or paste. Simmer til the tomatoes are cooked down and the sauce is reduced, and serve over pasta with Parmesan. Make sure you have loose trousers on...

I use this Rick Stein recipe to make a ragu, but usually use beef mince because it's cheaper, more widely available and can be lower fat and just mix in roasted cubes of aubergine, because I CBA pissing about stuffing aubergines - serve with bread and salad.

I recently tried a recipe where you use large aubergine slices as sort of pizza bases and put mozzarella & tomato sauce on top. Truthfully I prefer dough as a base - but they were okish

Can you make a ratatouille? Add some lamb mince to make it a meal (or black beans for a veggie version) and serve with feta on top & Pitta breads.

I love aubergine.
Aubergine parmigiana is lovely.

My kids hate aubergine, but eat these.
I use paprika in place of the harissa.

I normally just leave them on the online shopping list to have a bit of variety. I'd be happy with one but the minimum quanity they send seems to be 3! I don't dislike them but they're definitely at the bottom of my favourite veggies list! Grin

Slice into thick rounds, sprinkle with salt and 1/4 teaspoon of turmeric, rub all over and leave for half an hour. Then heat a pan with enough olive oil to shallow fry. Dip both sides of the aubergine slices thoroughly in cornflour before shallow frying. Great as a side to dry lamb/chicken curry with rice or just on its own with plain rice. 😋

Fry till golden and crispy on both sides, on a medium to slightly high heat. Low heat would make them mushy/soggy and 🤮

Is delicious. I normally bake the aubergine first rather than deep fry it, as it's healthier and less work, and it's still very nice.

Hello fresh had the most amazing roasted ratatouille with goats cheese. Had aubergine in it and really showed them off to their best.
