Anybody know a curry recipe that is tomato, coconut and nut free for chicken? Allergies!!

I don't even know if one exists.

I've recently found out I am intolerant to the nightshade family so this includes tomatoes. I also have much more severe allergies to coconut and nuts.

I love a mild chicken curry and now am stumped how to cook one whilst missing out tomatoes as they seem to be vital in so many recipes. Anyone? Thanks.

Hmm. Tricky!

Are spinach and cauliflower ok? I might be inclined to blend some of those up with your usual paste or spices...

You can totally make curry without coconut, nuts or tomatoes.

Fry onions, add your spices, add chicken stock or water, chicken and use yogurt or a little bit of cream to finish.

Roast butternut squash and use that with a bit of liquid (soya cream or water) to make a sauce, add to your spices. It works really well with Thai yellow paste but works as a sauce for any spices.

Fry chicken, spices (ground cumin, coriander) onions, chopped or puréed red peppers, garlic, ginger and chillies, add vegetables (eg chopped mushrooms, courgettes, spinach) add a little stock, simmer, and stir in yogurt at end. Add fresh coriander leaves.

I think that'd work ok. The red pepper is sweet like tomatoes and mimics the colour.

Roast aubergine alsowo4ks but I've only used it for a Bolognese type sauce (with tomatoes I'm afraid) but it's a starting point.

You can substitute pumpkin or butternut squash purée for tomatoes.

Soften 2 onions , add 3/4 cloves garlic chopped , thumb of ginger if you want, soften then put chicken in cover with yoghourt( ideally Greek ) a good teaspoon of fresh ground black pepper, some chilli flakes( or chilli powder or cayenne pepper or a chopped chilli) and a tablespoon of paprika and good pinch of salt . Bring to a simmer , cover tightly with tin foil and lid and simmer on a very low heat or in low oven for at least an hour and ideally longer. Serve with chapatti or rice. You could have roast cauliflower on the side... I like meets Sodhi's recipie( break into florets, toss with cumin seeds, turmeric and chilli powder, also salt and neutral oil... roast in med to hot oven eg 180 degrees for about 30 minutes until edges browning nicely...turning occasionally, squeeze a lemon over and serve.
Yoghourt blitzed with salt, a pinch of sugar, a green chilli and mint makes a nice relish.
Any number of dhal recipes would work.

I use Goldfish Chinese Curry Paste. I put it with a tin of condensed chicken and then a tin of milk as well. Fry am onion and the chicken add the sauce and cook for 30 mins at 170 degrees.

My family are Indian and would never use tomato, nuts or coconut with chicken! Often add potatoes though.

Look up Jamie Oliver's south Asian chicken curry. It's amazing! Just like Sri Lankan!
