Vegan food - what is your favourite meal.

This is inspired by the vegan wedding thread, it got me wondering what kind of things you eat if you are vegan.

I already cook meat free a few times a week but it usually involves cheese so not vegan.

Inspire me with lovely meals I can serve up please if I was to make the switch. Not full time but every little helps I hope?

I'm not vegan, but I eat a lot of plant based meals. I love:

Dinners:
Five bean chilli with wholegrain rice
Pasta with mushrooms, tomatoes, spinach, garlic and chilli
Baked sweet potato topped with black beans, avocado and tomatoes
Sweet potato, lentil and spinach curry with nan bread
Stir fried mange tout, carrots, mushrooms, spring onions and peppers with noodles, soy sauce, Chinese five spice and cashew nuts
Cannelini beans, peppers, courgettes and onions in a casserole with tomatoes, chilli, garlic, paprika and cumin

Lunches
Hummus and avocado toasties
Spiced carrot and lentil soup
Hummus, falafel and salad wraps

I eat overnight oats made with almond milk and chia seeds, topped with berries, for breakfast every day.

I love a good curry, any mix of lentils, chickpeas, squash and spinach is just yum! My husband always goes "erm where's the meat" for him it's not a meal if it doesn't have meat byte I would happily eat a vegetarian diet 7 days a week! (Maybe with the occasional juice steak thrown in lol)

Most of these sounds really good.

I have fussy kids but thinking in a curry/stew they might not notice sneaky veg.

I am pleased that nann bread and tortilla wraps are vegan.

I like fajitas and enchilada's so they can be filled with peppers, red onion and mushrooms.

Is quorn vegan?

Spinach and chickpeas!
Paella with haricot beans and smoked paprika.
Roasted aubergines (with honey) and pine nuts.

Not sure about honey being vegan?

I love hello fresh Thai Massaman Rice though unfortunately although the hello fresh spice paste is vegan, supermarket massaman pastes often contain anchovy. I substitute a tbsp of marmite plus a blend of appropriate spices. I've also done a nut-free version using dark tahini paste instead of the peanut butter and toasted sunflower seeds instead of cashews.

There are some quorn products that are non vegan as they contain egg, and others that are vegan and labelled as such, so check the packet.

Not all shop bought nan breads are vegan, a lot contain yoghurt. You just get used to reading labels (DS2 is lactose intolerant)

Falafel salad wraps are a family favourite, as is spinach and chickpea coconut curry. I do a mean carrot and cashew nut roast as well...

Honey is not vegan as it is an animal product. Last night I had risotto - lifelong vegetarian here - was already rich and creamy with umami tastes before I stirred in some Parmesan - used vegan stock with lots of onion and yellow
Peppers. Could easily incorporate eg lentils for further protein - obviously not then strictly risotto (before shouted down) agree with loads of recipes above. Veg/vegan eating is completely doable and tasty for adults and kids alike.

Is parmesan vegan? I thought it was cheese.

Parmesan is NOT vegan. It is indeed a cheese. Just leave it out. Mine was already tasty with umami (which Parmesan has - that intensely salty savoury flavour) before I added it ( not vegan but a vegetarian) so I don’t think going without the parm would harm.

I love making vegan lasagne ! I basically make any food I love just vegan . Oh love to make homemade pizza with violife cheese too.

Almost anything from the BOSH! book. Really great flavours. Love the nice spice rice, sticky shitake mushrooms, korma and naan, bosh bowls and all of them really!!

Also love butternut squash tagine
Vegan fry up - Sainsbury’s shroomdog sausages, beans, avocado, tofu scramble, grilled tomatoes, hash browns and mushrooms
Miso and udon noodle bowl with tofu

Chana dahl. The best thing i got from my first marriage was the recipe my xh learned from his Iranian ex-girlfriend #modernlife #blessed #fuckedup. Essentially lots and lots of onion, ground coriander and ground cumin heated gently in oil, vast amounts of fresh chopped coriander stirred in til it looks like dubious brown mess, 2-3 cans of chopped toms, cook for ten minutes, add two cans of drained chickpeas, stir well, bring to boil, simmer for anything from 30 mins to two days, serve with rice. Once you start eating it you cant stop.
