A sign in my local chip shop has confused me

So, had a cheeky fish supper tonight.

Standing in the queue I read the various signs, and apparently their chips are made from 100 percent potato.

Seriously, am I naive or are chips ever made from anything but potato?

My cousin has coeliac disease and was
v excited that my local chippy had gluten free chips, which confused me as I would expect proper chippy chips to be gluten free (although I’ve learned from her that frozen/processed stuff tends to have flour in the weirdest items where it really had no place to be). But she explained that lots of chippies cook the chips in the same fryer as battered stuff, so the gluten can get into the oil and cross contaminate the chips. Pesky gluten gets everywhere!

This is completely true. We offer gluten reduced if we cook in the gluten free batter but we are clear that the oil will have traces.

The customer can make the choice depending on the severity of their sensitivity.

My local chippy does gluten free night when they change their oil (once a fortnight I think.). I imagine for those with very serious allergies there would still be traces in the fryer/air but at least the oil is gluten free!
