Can I have your favourite family fish recipes please?

We need to eat more fish (despite being on a budget). dd3 loves salmon with mash and we eat fish fingers! but surely there e must be lots of nice easy recipes out there!

Coat smoked haddock fillet per person in pesto and roll up, fixing with a cocktail stick. Place in and oven-proof dish , cover in sliced tomatoes (if liked) and add 1 tbsp olive oil and 1 tbsp cream per person. Approx 1 hour in a medium oven. Serve with mash and greens. Very popular in our house.

We do a lot of fish in tinfoil bags so it doesn't dry out. I also do a really simple pasta dish which is just baked salmon, shredded up, put into a pot with spaghetti, philadelphia, lemon juice and black pepper which we serve with whatever green veg we have.

Also making your own fishcakes is fun and pretty straightforward too :)

Roast salmon tray bake with whatever veg you like
Eg tomatoes/ courgettes/ beans/ olives which all cook at same time as salmon
Or: potatoes/ fennel/ celery which take longer so put in moderate oven for 25mins or so before adding salmon fillets to tray
Smoked haddock chowder; leeks/ potatoes cooked in chicken stock add cooked smoked haddock and sweet corn and handful of parsley
Prawn fajitas; soften red pepper/ onion / chorizo together add raw prawns and when cooked serve in wraps with lettuce, red peppers, avocado, cucumber, grated cheese or whatever
Prawn jambalaya; onion/ celery/ red pepper softened add a little chorizo , creole of other spice mix , then add brown rice( I use the sachets for this as is a midweek dinner) and raw prawns... serve when prawns cooked
Kedgeree, loads of recipes but I like Meera Sodhi's if you want a pointer
Any flat fish fillet with seasoned flour, fried in a little oil and served with veg
Paella with fish only but otherwise cooked in usual way
Moules mariniere; very easy and special but fairly inexpensive
Pasta with squid: cut baby squid into tubes and fry, add garlic, pinch of chilli, tin(s) of tomatoes, a few anchovy fillets and let stew, when sauce melded serve with parsley and over spaghetti.

Fish has the huge benefit of being very quick to cook and thus ideal for midweek meals .

Haddock fillets cut into nice thick chunks, slice of black pudding on top, wrap in a rasher of smoked bacon, bake til all nice and crispy and have with mushy peas.

Marinade chunks of white fish in yogurt, 1tsp chilli powder, 1tsp turmeric, and 2 tbsp garlic and ginger purée. Heat oil in a pan, add 3 cloves, cinnamon stick, 2 green cardamom pods, 1tsp black pepper corns and a bay leaf. Let them sizzle, then add 1 tsp black mustard seeds and let them pop. Add 2 chopped onions, and cook gently until soft (8-10mins). Add the fish and marinade and cook for about 5 mins, stirring gently. Slice 2 de-seeded green chillies and add. Cook for 8 mind until the fish is cooked through. Sprinkle with coriander if you like (though I don’t usually bother).
Serve with rice, or chappattis or parathas.

Whole trout (with heads and tails off) cooked in a pan with butter, garlic and lemon slices between the fillets.

Waitrose does 20% off all fish counter fish on Fridays. They will foil seal your fish for you and add a knob of flavoured butters and lemon. The butters are lemon and petter or herbs/parsley. You just shove it in the oven. The flavour on the fish is really lovely.
