What to do with fudge soup?

DD1 has badgered me all holiday to make a Harry Potter fudge recipe and today I've finally braved it. However, while the stuff tastes delicious, it hasn't set, no doubt owing to the lack of use of a candy thermometer as advised. It's basically honey-like caramel.

Mumsnetters, please help me rescure the stuff and hit me with your wonderful recipes, which call for a saucepan full of thick, but runny caramel. I can only think of millionaire slices at the moment.

Use as a sauce to pour over vanilla ice cream.

Or over baked bananas.

You could try reboiling it? It prob didn’t get hot enough to set-you can test without a thermometer by putting a plate in the fridge, once it’s boiling pour a little on the cold plate and if it ‘wrinkles’ on the top straight away when it’s prodded, it should set when cool.

Or fudge sauce in jars in fridge for puddings as pp said!

My housemate did this recently, they ended up making a sponge cake with it. I think a bit was added to the batter but most was put over the top and soaked into it and it was lovely. Such a delicious mishap.

Stick it on a tray lined with baking paper and freeze it for an hour then cut it into squares and store it in the freezer. Freezer fudge Wink but yes, over ice cream sound delicious and much less faff

I'll secone freezer fudge!

Over ice cream or cake sounds lovely as well :)

Or you could try your hand at a Starbucks-ish concoction? (Can't be too difficult...)

Just reboil it and google 'fudge soft ball' for description of how it should behave when dropped in to water.
