Impending cake disaster

Bugger.

I've got a blackberry and apple crumble cake in the oven, as in b&a cake with crumble topping.
I followed a recipe but obviously didn't read it properly and combine that with being a bit dim I put the cake mix in the tin, sprinked over the crumble topping and put it in the oven. Ten minutes in and I realise the cake is rising but the crumble is sinking in to the cake.
Checked the recipe again and it was supposed to be cooked for 20 mins, THEN the crumble topping sprinked on and then cooked for the rest of the time.

Going to be inedible, isn't it? Or at least a cake with a very odd texture Confused Grin

Actually, I very much love it that way. The crumble sinks in and makes a strange craggy appearance. It's called a "Buckle", instead of a crumble cake!

Nah, it'll be fine. Surely cooking the cake for a bit then opening the oven to add topping is more likely to lead to a sunken cake? I'd still eat it anyway, it sounds lovely!

Yes, surely a sunken cake if you open the door after 20 minutes.

Anyway, it is now a buckle cake and I will serve it with panache! (and some double cream to hide the worst bits)

the crumble topping has hazelnuts in, and they smell divine.

It will be delicious. My favorite is a blueberry buckle. I load the crumb topping on so it sinks a lot and makes little ditches in the top of the cake. So good. Your blackberry apple one will be fabulous.

Seriously, what's not to like? Crumbly, cakey deliciousness. Sloshed in cream or ice cream. Fabulous.

Actually, it turned out rather well! Most of the crumble didn't sink, and it rose nicely. Took 40 minutes longer to cook than the recipe said, though, so it's only just out of the oven.

My next dilemma is, I want to go to bed now, cake is still hot and in the tin, I don't want to cover it with foil as it will go soggy overnight, so is it ok just to leave it on the side uncovered? I think so? No pets or anything that could get at it.

Absolutely I'd leave it out overnight uncovered! Years of baking and doing exactly this have led to no worse than getting up to find DH has dug into a said cake for breakfast! 🙄

Charlie, I'm on a new tablet and have no idea how to cut and paste links, but if you Google 'blackberry and apple crumble cake' it will show results that include a recipe on the daily mail website, that's the one I used. Sorry it's on the daily mail website (blush)!
