Recommended a vegetarian cookbook?

I've been thinking recently that I'd like to eat more vegetarian meals, for the health and environmental benefits, not to mention the cost. However, I don't have a great repertoire of vegetarian recipes to choose from. Please could you recommend your best vegetarian cookbooks for inspiration? Or, if there are particular recipes you enjoy, feel free to share them!

I've been eating more vegetarian food recently. Books I've enjoyed have been the Leon vegetarian one and two HFW/River Cottage ones - Veg Every Day and Much More Veg. I have also had the World Food Cafe book for about 20 years and still use it regularly. Following for more good ideas.

A Girl Called Jack is brilliant! Not vegetarian, but budget, and loads of easy, cheap, tasty vegan recipes. All have gone down very well with my family Smile

Rose Elliot's The Bean Book good for everyday meals and for soups; Hugh Fearnley-Whittingstall's River Cottage Veg books not bad; Nigel Slater's Tender Vol. 1 is very useful because it's organised alphabetically by vegetable, so good for ideas and for using up left-overs or cooking seasonally. I also get a lot of recipes online, I tend to Google recipes by ingredient, so if spinach is in season and cheap, I just look up spinach recipes, until I find one I like then take a screenshot.

Just to third the HFW veg everyday book, it's absolutely great and I use it all the time. My favourite cook book ever. His others are really good too but not purely vegetarian

Thug Kitchen. It’s vegan but none of the people I’ve cooked did from it have ever even noticed that. Great recipes.

I was going to suggest Hugh Feargly-Whirgly so I 4th it instead. Next on my list to buy is the Ottolenghi veg one.
