Worked in a few different hotels as a waitress both in hotel restaurants and during weddings etc. Bar work too. AMA!

The one I work in just now is four star. However I've found stars don't actually mean as much as you'd think. Firstly a company needs to be assessed to officially gain stars. You need to pay for this, some companies do and some don't.
Also the checklist that makes a hotel X amount of stars doesn't overly reflect customer service. For example for a hotel to be 5* it needs to have a lift, two kitchens (one of which is 24 hour) etc. So a hotel having 4 or 5 stars isn't necessary going to provide a better experience than a hotel with less/no offical stars. Ultimately it's good marketing!

Never. I've worked with hundreds of different chefs and waiting staff, and have heard many a story claiming things along the line of that have happened when they worked elsewhere. But I've never known anyone to do it personally, nor anyone who would for that matter.

In the next couple of years I would like to have moved away from hospitality and into a more solid career.
Personally no, I don't and have never felt valued in my role. "Just a number" is a term used often in hospitality.
Regarding attracting people in; I've made some great friends, and had great fun working in hospitality but that about where the perks end. The pay is never great and the hours are often horrendous, I never once minded either when I was single but I really don't find it conducive to family life. Many friends of mine have been hospitality management, doing much the same job for not much more money. So in all honestly I do think it's a job best suited for part time/short term.
