I don’t understand how 28-32 year-old lawyers and other professionals manage to pay you a visit if you don’t work past 7pm. Those jobs are typically full-time and office hours. Do they skip work to see you?

I was married to one of these (not for long). It's not as if we didn't talk - and he had a long-term mistress he talked with, too. He waffled when I tried to find out what all the talking was about; I assume he was bullshitting, being his fantasy best self with women he was very unlikely to meet in his everyday life while knowing he was guaranteed sex. In the case of poverty at least, the same is true of most of us. We'd be unable to pay the bills without our jobs, so the real reason we go into our chosen vocations is to avoid penury, it's just a bonus if it also happens to be something you actively want to do. Prostitution is no different in that respect.
