Which really healthy meals do you love?

I know there's likely to be a pile-in with people saying everything's healthy in moderation, but sometimes you make something that is so lovely and fresh and you just know it's good for you.

So mine at the moment is a bowl of chopped avocado, cherry tomatoes, garlic, red chilli, fresh coriander and the juice of a lime.

Just making it is really lovely - the smells are amazing and it takes great, too.

bircher muesli, like a pudding, only i eat it for breakfast. plenty of fruit, yogurt, honey, granola and porridge oats.

Like you I also enjoy trying out random bits of fruit and veg in salads. At the moment I really like a good Niçoise too.

I love asparagus but I wouldn't give you anything for broccoli, Tate! It tastes like a punishment to me.

I do stir fry with courgetti, chillies, peppers, any other veg I have on the go, usually broccoli and cherry tomatoes and a couple of slices of chopped up bacon. Seasoned with crushed peppercorns.

Ooh my mouth is watering now!

There's a nice low carb sauce: fry mushrooms, bacon and garlic in a pan, add single cream and a lot of freshly ground black pepper. Simmer until the sauce goes quite thick. It goes really well with chicken.

Baked salmon with lemon and thyme on salad of mixed rocket, feta cheese, cherry tomatoes, spring onions, toasted pumpkin seeds, a little chopped chorizo and apple cider vinegar as a dressing is my favourite lunchtime meal ever.

An old Delia recipe I love (from the Mediterranean book years ago) is this:

Cut a red pepper (per person) in half. Scoop out the seeds but keep the stalk on. Inside each half goes skinned quartered tomatoes, a crushed clove of garlic and a few anchovies. Put fresh basil on top. Pour a bit of olive oil on it and put into a hot oven. If you don't like anchovies, replace with goats' cheese.

I've just gone from veggie to vegan, and my all time favourite so far is lentil and cashew loaf, with sliced aubergine. So filling too.

Stir fry - onion, garlic, peppers, mushrooms, water chestnuts, baby corn, mange tout, I'm veggie so may add quorn or tofu if you eat meat you could add chicken or lean beef. I make my own sauce with passata, soy sauce, sweet chilli and whatever spices we fancy, serve with noodles.

Salad - spinach and rocket for leaves, peppers, cucumber, baby tomatoes, shredded beetroot, then top off with tesco sun-dried tomato and mini mozzarella mix which has some olive oil in yum

Baked salmon with lemon, brown rice (or maybe one of those sachets of posh mixed grains that you can microwave) and a load of steamed kale.

I also love a big old plate of salady bits...

You might like my made up stroganoff recipe then, I do with quorn beef.

Fry off onion and garlic and one hot chilli and mushrooms, reduce heat and add paprika, 'beef' and garlic salt (I love garlic ) then l/f crème fraiche just warm as otherwise it'll curdle, serve with rice or noodles.

I cooked the second recipe on this list the other day and it was LUSH (we had it with couscous). Minus points for nothing green I guess, but plus points for being dead easy and mostly things we had in the cupboard plus frozen herbs.

A whole head of steamed cauliflower, still in one piece but with the stalk hollowed out, sometimes with mayonnaise but usually just a sprinkle of salt. Nobody else likes it, so it's all for me!

Healthy meals are caprese salad, panzanella salad, all sorts of pickles, hummous with anything, minestrone soup with as big a variety of lumps as possible, pumpkin and rice (yum) and all sorts of beans, especially in winter.

And homemade popcorn, of course.

bacon yum yep, it's SO easy. Caramelise an onion, add garlic to taste, then bung in about 250g of unsalted cashews for last couple of minutes (I whack mine with a rolling pin to smash them up a bit first). Slice aubergines lengthways and brush with coconut/olive oil, and roast for twenty minutes turning halfway. Add about 300/350g of lentils that you've boiled till cooked, but not too mushy. Drain lentils, mix everything together and add a slice of stale bread or breadcrumbs- I usually leave a slice out overnight, so it goes hard. Then, add a couple of tablespoons of the marigold vegan or vegetarian stock, the low salt variety is better IMO as the original is quite salty, put in a greased loaf tin or whatever, and add the aubergines on top. Brush a wee bit of oil on top, cook for 30 mins at 200. If the tops is getting burnt cover with foil. I usually make three at a time and freeze the others. It's gorgeous hot or cold x
