So, recently I have fallen in love with M&S's prepackaged salads, the little pots that make the perfect accompaniment to a sandwich for my lunch-break at work. There are some seriously delicious ones, especially the lentil, couscous and goat's cheese one, the rainbow salad and the nutty superfood one. I just couldn't stop buying these every day and then the cost all adds up...
Anyway, today I was mulling over making soup to take to work for this week but then thought it's not really soup weather any more. And then I started thinking wistfully about the delicious but pricey M&S salads, and wondered if I could make something similar myself. And then I ended up looking at the M&S website and realised that they actually have all the salads with high-quality images of all the ingredients labels on the website here. So not the recipes exactly, but close enough once you see everything that goes into them and in what order of quantity.
I just made the lentil and goat's cheese one, and I am pretty impressed with how close I've managed to get to the one you buy in the store! I've made a bit tub of it, enough for a good few days, and a small jar of the dressing (I have also realised why the dressing tastes so good, the first ingredient being honey!).
Anyway, just thought I'd share this in case anyone else loves the M&S salads as much as I do and/or maybe wanted ideas for new salad recipes coming into spring/summer. Maybe it's something really obvious to do this, if so feel free to ignore me while I revell in having only just realised!
