Nut roast - anyone got a really lovely recipe?

Cooking Christmas dinner for 8 this year, 4 of whom are vegetarian (me included).

We're all happy to have something to go with the traditional trimmings - roasties, veg, gravy etc - and it seems like nut roast fits the bill, nevermind it's a bit unimaginative.

But has anyone got a really delicious tried and tested recipe suggestion? We'll probably do a trial run first, but it would be good to hear of one with a recommendation behind it.

It's very tried and tested I have it every year with all the trimmings. I don't want to miss out on all the roast potatoes etc!

Do you have gravy with it? Don't suppose you've got a good recipe for a veggie gravy? Is that a bit cheeky??

That really is a lovely recipe- I used to have it every year when I was vegetarian, and even now I have lapsed I still make it. I often do it with all (or 50:50) pine nuts as well, just to make it a bit more luxurious.

I can't remember the exact recipe for the gravy I used, but basically it was an onion, garlic and 4 tomatoes, roughly chopped and gently cooked in butter. Then add a 50:50 mix of red wine and veg stock and simmer for ages to reduce. Then strain into a jug. It's quite rich so suitable for Christmas.

I've just realised that chuckeyegg's recipe is a variation of the one I use- I think Rose Elliott has done quite a few versions of it.
IIRC (sorry, the recipe is at my Mum's), my version has milk rather than stock in the nut mixture and an egg in the stuffing.

I have a recipe for the most amazing nut roast. It is called the Festive Beast (well it is supposed to be Festive Feast), and it is from the Food For Friends restaurant cookbook. It is a boozy mushroom ragout, wrapped in a chestnut roast, which is then wrapped in pastry - it is really delicious. It can be made in advance and frozen, it is also lovely served cold.

Zombie thread I know, but I advance searched 'Nut Roast' and this is what I found. Veg gravy too, Oh Yes. Thank you mnetters from years gone by I'm sure you're still around-
