I never get this right - either there’s loads left over that gets chucked away, or I feel like there’s something missing off the plate. What do you do? (besides roast potatoes, they don’t count!)

Staple veg for us is creamed potatoes, roasted carrot and parsnip, and peas. Last year we had cauliflower cheese but nobody liked it. This year I’m not bothering with anything extra veg wise

We do bowls of carrots, broccoli, parsnips and sprouts. There’s always some left over though so this isn’t really helpful 😂

Roasted potatoes, peppers and parsnips, sprouts, carrots. Those that are left over get eaten cold with pickles and turkey.

Leftovers are used up in root vegetable soup; cauliflower cheese goes into baked potatoes on 27th. Some leftovers are used to make canapes for Boxing Day drinks (turkey and stuffing with cranberry on a mini potato rosti type thing). Never mashed potatoe.

Cauliflower and broccoli cheese
Roasted carrots and parsnips
Sprouts and chestnuts
Red cabbage with apple.
Mashed swede

Mashed carrot and swede

Cauliflower cheese

No to mashed potatoes

I’m doing roast potatoes, mashed potatoes, roast parsnips, carrots, carrot and swede mash and broccoli. It’s my first year doing it and it’s just four of us but I’m veggie and won’t have a ‘meat’ replacement so want lots of different types of veg. I figure and left overs can be heated up Smile oh almost forgot treating myself to cauliflower cheese too Grin

I quite like the idea of cauliflower cheese. I think the dinner needs some kind of creamy counterpoint.

No bread sauce (hate it) so cauliflower cheese is the creamy item needed. No sprouts either, I know it’s christmas but no one likes them in my house.

Why are you binning leftovers? They’re one of the best bits of a big Christmas dinner. Confused

Definitely yes to bread sauce, no to mash.

The leftovers are essential, you need them for Boxing Day! Chop, fry, serve with baked beans and you're in heaven. A super charged bubble & squeak.

Everybody eats the leftover potatoes, meat and stuffing, but never the veg!!

I follow the family motto of "never knowingly under catered". I always cook far too much but I think leftovers are one if the best things about Christmas.

I always do roast potatoes, mashed potatoes, potato croquettes (yes 3 lots of potatoes). Roast parsnips. Steamed sprouts, carrots and peas. I've also always done yorkies as my STBXH never ate veg. I'm a bit gutted we are eating out this year.

I do Yorkshire’s as my dd will only eat Yorkshire’s and roast potatoes for her dinner (fussy eater).

Accompaniments here will be:
Cauliflower cheese
Roasted parsnips
Brussel sprouts
Carrots
Roast potatoes
Potato croquettes
Yorkshire puddings

Usually we're feeding loads on Christmas Eve and Christmas Day so it's,
Roast potatoes,
Mashed potatoes,
Carrot, swede and potato mash from M&S because DC3 and 4 are fusspots and don't eat potato in any other form Hmm
Cauliflower cheese,
braised red cabbage,
Carrots,
Sprouts with bacon,
roast shallots,
roast parsnips.
Everything except sprouts and shallots gets served with gammon on Christmas Eve then the leftovers get reheated on Christmas day

When I do Christmas dinner, we always have:

Roast potatoes (lots)
Maple roast parsnips
Cauliflower cheese
Brussel sprouts stir fried with bacon and toasted pine nuts
Red cabbage
Carrots, beans & broccoli

I've never seen the point of doing different types of potato though.

Oh yes sprouts too and will aim to do Yorkshire’s but depends on my pre trip to pub Grin I only have on oven so sometimes difficult to get Yorkshire done and keep everything warm or not burnt!
