Simple, fish meal ideas please

May I ask people to give me their fish recipe/meal ideas please? I'm wanting to try a more Mediterranean diet, I'm not even sure if that's the correct term but just something delicious and simple. Fish with veg/salad/potatoes...

Yesterday, I pan fried cod in a lemon butter/garlic base from a recipe I found online, with oven veg and herby potatoes. It was nice but not something I'd plan to make each week. I'm more of a hearty winter cook so struggling with summer recipes other than salads/burgers...

I've looked online and just get recipe blindness from all the different offerings. I have no idea what fish goes well with what or how to cook it... So thought I'd ask here for some tried and tested, cooked by real people, meal ideas, please. Thanks for any help!

Thanks for keeping the ideas coming! We had this one the other night with cod and it was so nice! We've had a couple others too, but I haven't got time to look through the posts to tag atm, but it's really appreciated and we're working our way through them 😍
When I was at Turkey earlier in the year, just an all inclusive hotel so not specifically a Turkish dish, there was a fish, cooked whole and the meat just came away from the bone, leaving the head/tail and skeleton intact but I've no idea what it was, if anyone has any ideas?

I've really enjoyed the ones we've had so far, thanks so much everyone.

For a super quick midweek meal i do salmon fillets with teriyaki sauce drizzled over with sesame seeds scattered on top, bake in the oven for about 15 minutes or so (best if you prepare it in the morning as the sauce soaks in).
Serve with a stir fry/noodles/rice or salad and potatoes.

Or if you have an airfryer do it in there it’s a lot quicker

That's my original post. I also thought of a horseradish and dill thing and a creamy version of the piccata - which I had completely forgotten I had come up with until I looked myself up just now. My brain sometimes.

Mine was Salmon Piccata. You can do the same thing with any fish though. Basically pan fried with butter, lemon, garlic, capers and fresh parsley.

Our household favourite is a smoked haddock & leek risotto. Serve with lots of Parmesan and some pan fried tenderstem broccoli. Chef’s kiss!

Thanks for the new comments, I'm still here checking in and I'm yet to find a suggestion that I don't fancy! They all sound good, I feel like I've finally got some direction when it comes to meal planning around fish, i really appreciate all the time people have taken to give suggestions 😊 will be trying some more ideas over the next couple of weeks 🤗

I make Provençal Salmon:
cut Mediterranean vegetables, such as red & yellow peppers, courgettes & red onions into chunks & roast in olive oil with garlic cloves, oregano & herbes de Provence. Put salmon steaks on top & add cherry tomatoes, black olives & green beans, salt & pepper & roast for another 10-15 minutes until the salmon is cooked through.

Another salmon one…
10 mins in the airfryer
serve with roasted new potatoes - can also do in the air fryer and either tender stem broccoli or chard pan fried with garlic & lemon juice.
M&S do a lovely dill & mustard sauce that goes so well with it.

edited to add a really quick one that we all love.
stir fry 2 packs of the microwaveable basmati rice in some tumeric & ginger & garlic paste.
pop some smoked haddock fillets on top, add a few handfuls of baby spinach and some veg stock. Let it cook for 5-10 mins. Give it a good stir one the fish is opaque. Add some chilli flakes. Squeeze in a lemon and finish with chopped spring onion.
delicious hot or cold

Family favourite here is a rice dish made with salmon and prawns with lots of garlic and Old Bay seasoning. Sauté onions and peppers, add garlic, then add stock and rice with loads of seasoning. Cook until nearly done, add peas and the cooked fish.

Any fish would work. Or chicken and prawns

Another use for smoked salmon trimmings or trout trimmings is to make a kind of omelette vaguely Arnold Bennet.

Fry the trimmings gently, add beaten egg and some gruyère or similar cheese. Maybe some fresh herbs.

I have a recipe for 'Halibut Catalan' but it is in a very old cook book so probably not authentic but Google has given me quite a few options so that might be worth looking at.

Oh and a totally crazy thing I made up, possibly after a couple of glasses, is to get a piece of fish, put it on foil and then top it as you would a pizza. Tomato sauce - I would use a mix of passata and purée, serrano ham or peperoni and topped with mozzarella.

Then bake in the oven for 15 - 20 mins.

It's probably not the healthiest of foods though.

Has anyone mentioned Paella yet? You can make it with more fish and no chicken.

Smoked salmon trimmings with butter, lemon juice and a couple of herbs goes well with spaghetti.

Smoked salmon trimmings also go well mixed with cream cheese and baked in a filo parcel. Add seasoning and lemon juice to taste.

There are lots of recipes for various pâtés, usually made with smoked fish.

We also love a piece of cod or salmon wrapped in Parma ham & baked for about 12 to 15 mins

Another one is season an individual fillet of salmon with salt & pepper, some dried herbs, a bit of oil and a squeeze of lemon and bake for 8-10 mins another way. Nice and simple but very tasty.

All we have served with boiled baby potatoes & veggies like long stem broccoli and carrots cut into long quarters, or potato wedges and a green salad, or even over a rice salad is good

Slice a clove of garlic. Warm it in olive oil.
When it smells garlicky, add a drained tin of cannelini beans.
Add a drained tin of tuna and mix
Warm through gently.
Serve on a bed of fresh rocket.
