Mine is equal measures of buttermilk and mayo, and then double of Greek yogurt, half the juice of one lemon, two tbsp of dried Parmesan, a teaspoon of dill, garlic granules, Maldon seat salt, onion powder, and cracked black pepper.

Makes that amazing ranch dressing you get on the side of fried shit in America and is great for pizza crusts but you can also make kids eat ANYTHING dipped in it.

I’ve watched my kids enthusiastically eat celery, radishes and green peppers which aren’t normally things they will eat raw.

Chilli recipe I've used baked beans in tomato sauce when I've got nothing else, it's quite tasty

AnneLovesGilbert · 24/10/2020 15:07

Thanks for the lovely chilli recipes everyone Smile

When onions are abundant and cheap chop lots in quarters, place on tray lined with tin foil drizzle with oil (little) and sprinkle with brown sugar just a little, fold foil up to make a bag. Roast for 2hours or until brown and sticky. Put in pan and blend till smooth add drop of water if needed. Freeze in small bags or silicon muffin tray ( once frozen bag up) use for soup, stew, casseroles. Saves time and stinky house smell

Namechabged · 24/10/2020 13:27

I’ve got another one. It’s butter and olive oil heated in a pan and then you add finally chopped red onion to soften and then loads of garlic, salt and pepper, cook it down and add shredded Brussels sprouts from raw, cook in, chicken stock and finish off with Philadelphia and Parmesan. Either with chicken and rice as a side or in pasta. My children never noticed it was Brussels sprouts and we tell them it’s baby cabbage pasta.

Frittata. yes tinned potatoes are great to have in store cupboard I used when on lockdown. Yummy just fried with butter

Ddot · 24/10/2020 12:40

AnneLovesGilbert I use lots of mushrooms tinned beans, whatever you prefer, peppers, onion, cauliflower cut small, tinned plum tomatoes (squashed), not the chopped yuck, any meat substitute but dont need to. Chilli, stock cube and finish with cube of plain chocolate, ALL can be from frozen or tinned. If you want you can add a packet of chilli con carne. Top with grated cheese, which can be frozen too.
@Ddot. I do a cheat version of frittata using tinned new potatoes. They work brilliantly and no one can taste the difference.
My cheats frittata - add a packet or 2 of ready salted crisps instead! Honestly works.

GiraffeNecked · 24/10/2020 07:47

I use cold roast potatoes in a frittata. Or fry them up with a few toms, some chilli, some pepper or courgette, bung a poached egg on top or break an egg into them. And eat.

ouchmyfeet · 24/10/2020 07:46

@AnneLovesGilbert

Anyone got any secrets for a brilliant veg chilli? It’s a freezer and store cupboard meal as we need to shop.
Sorry, late coming back to this thread but I have a fab veggie chilli recipe. It's oven baked and SO easy. Recommend the salsa recipe with it too. It's from the green roasting tin:

Oooooh following

Ddot · 24/10/2020 05:28

Frittata. Boil new potatoes and set aside to cool. Fry in butter spring onion if you have, or just chopped onion if you dont. Then add chopped fresh tomatoes and the sliced new potatoes. Fry till potatoes are catching a bit of colour. Pour over mixture two beaten eggs as evenly as possible then sprinkle good amount of grated cheese on top. Cook bottom for few min then put pan under grill to cook top. Grill till cheese melted and brown. My mums favourite, serve with chutney, coleslaw, salad and crisps

Oh and crispy kale!
Spray or rub olive oil into kale, shove on a baking tray into the oven and watch like a hawk until it's crispy but not black. Add Nando's peri peri salt when it's out the oven

QueenPaws · 23/10/2020 23:49

Two I get asked about

Quick pasta sauce - either pancetta or chorizo in a pan until crispy, add creme fraiche and stir, add some form of cheese (Parmesan or cheddar work well) and stir until it looks sauce like. Add some pasta water if you need to. Also good with cubed courgette in it

Beef stew with no browning. No quantities really as I just chuck it in. I think at some point it had flour in it but it doesn't really need it

Celery, onion, pancetta and carrots all chopped, fry until softened, add bay leaves
Add mushrooms, a tin of tomatoes and about 500ml ale/stock/red wine, rinse the tin of tomatoes out and use it to add more water if needed. Bring to the boil, add 750g diced beef (fatty is best), season it, stir and cover
Sometimes I add some lea and perrins or a tiny bit of marmite or an oxo cube depending what it looks like technical
Stick in oven for a few hours at about 180c, stir every so often so it doesn't stick and add more water wine if needed. Should come out pretty thick and beef falling apart

ApplesinmyPocket · 23/10/2020 23:32

OP, this is such a lovely thread. It's really lifted my spirits today and there are some GREAT ideas in it. Thank you! Flowers

Jumble berry jam. Cook brambles, blackcurrants, redcurrants in a large pressure cooker pan (no lid) or jam pan. Simmer on low heat. Once juice released boil for good ten min. Mash fruit with potato masher then put through sieve getting as much juice out as possible, discard seeds. You can then put through muslin cloth if you want it to be gem like clear. Weigh juice and add same weight of jam sugar. Put back in pan and boil till good rolling boil going. After ten fifteen min take small amount out and test on plate it should crease when pushed with finger. Pot in steralized jars ( heat jars in oven till hot) boil lids in pan of water. For a twist add fresh chopped chilli on rolling boil. This jam great with cheese, crusty bread and red wine.

Thanks x going to try replacing meat with something as don't partake. Wont be as good but I'm sure it'll still be yummy

Fink · 23/10/2020 19:59

I'm going to try one of the sausage roll recipes tomorrow. Maybe a combination of all of them!

Does anyone who posted a sausage roll (& stuffing, marmalade, apple sauce ...) recipe have any idea of quantities/proportions of sausage meat to other stuff, and how much pastry is needed?

Thanks! I'm salivating already ...

BlueFringe · 23/10/2020 19:47

@BlueFringe

Ok this is a bit weird but I have this recipe that currently only I have. It was passed down from my uncle to my DM who died recently. We have barely any family left so I’ll only be able to pass it on to DD, but it’s so good that I think it needs to be out there in the world. I’ve only ever given it to people one to one before... but here goes.... in honour of my wonderful DM who’s no longer here to make it with me... Wine

It has no exact measurements (the ‘packs’ are just as bought in Asda lol) and contains about every food group in it. It’s a meal in itself. But also amazing on a Christmas dinner:

TINA'S CHESTNUT STUFFING

Chestnuts x 2 pack roughly chopped

Chopped Bacon x 2 packs

Peppers x 3 chopped

Onions x 1 bag pre chopped

Egg x 1 or 2 (to bind)

Breadcrumbs x 2 tubs

Sausage meat x 2 packs

Chorizo x 1 sausage chopped

Garlic x 3 cloves chopped

 1. Pan fry chopped bacon & chopped chorizo. Set aside to cool
 1. Pan fry chopped onion & chopped peppers. Set aside to cool
 1. In a bowl mix sausage meat, chopped garlic, breadcrumbs and egg.
 1. Add sprinkle of salt and pepper
 1. Add bacon, chorizo, onion, peppers and chestnuts to the bowl. Mix in with hands until all blended.
 1. Put in oven tin. Greaseproof paper lining helps. Press with fork and score the top.
 1. Bake at 180/200 until top is dark brown and crispy.
 1. Allow to cool then slice. It cuts easier when cold but delicious hot or cold.

Merry Christmas DM HaloWine

@Ddot here you go Smile

I cant find Tina's chestnut stuffing recipe, how do I get it up

devildeepbluesea · 23/10/2020 18:22

@peaceanddove Chicken Divine was very well received here this evening!

mrsmummy1111 · 23/10/2020 17:29

I'm sorry I don't have anything to contribute just yet, however I do have a request if allowed.....

Can anyone tell me how I can make fattoush? With the crispy tortilla/pitta bits and the pomegranatey sort of dressing?? I've tried many recipes over the years but nothing has ever compared to the times I've had it in the Middle East. The crispy pitta is never crispy enough and just tastes like croutons. Does anyone have the secret? I will be forever in your debt....
